Dairy Ingredients: For non-dairy substitutions, use any non-dairy milk plus 1 tablespoon of acid (lemon juice, vinegar).

How to Pick Chicken:

Color: Fresh chicken should have a pinkish color. If the flesh is gray or transparent, it's most likely not fresh. Avoid cosmetic damage, such as bruising or tears in the skin, which can affect the chicken's quality. 

Texture: Chicken should also be plump. When you press against it, the meat should firm but somewhat springy, resuming its shape after a few seconds. 

Odor: Fresh chicken shouldn’t have an odor. If you notice any unpleasant smells, it’s likely the chicken is no longer fresh.

Instructions

PREPPING CHICKEN

  1. Mix all the seasoning ingredients in a bowl, then set aside. 
  2. Mix 4 tablespoons of the firecracker seasoning with the buttermilk and hot sauce in a large resealable plastic bag. Once mixed, place the chicken pieces inside the bag. 
  3. Marinate the chicken in the refrigerator for at least 12 hours or up to 24 hours. 
  4. Prepare the wet batter by whisking the eggs and olive oil in a large bowl until fully incorporated. Set aside. 
  5. Prepare the dry batter in a separate large bowl by mixing together the flour, cornstarch, baking powder, and 4 tablespoons of the seasoning. Set aside. 
  6. Place the crisper plate into the COSORI Air Fryer basket.   

COOKING THE CHICKEN

  1. Select the Preheat function, adjust temperature to 330°F, then tap Start/Pause
  2. Remove one piece of chicken from the marinade, dip into the bowl with the wet batter, and let any excess wet batter drip off. 
  3. Place the dipped chicken into the bowl with the dry batter and make sure the chicken is coated evenly. Gently shake off any excess flour and place onto a food tray with a rack. 
  4. Repeat the battering process for all the chicken pieces. 
  5. Place the chicken pieces onto the preheated crisper plate. 
  6. Select the Air Fry function, adjust temperature to 330°F and time to 20 minutes, then tap Start/Pause
  7. Remove the air fryer basket after 10 minutes of cooking and spray the chicken evenly with oil spray. Place the basket back into the air fryer to finish cooking. 
  8. Remove the chicken when done, allow to rest for 10 minutes, then serve.
