Prioritize organic options for kale, spinach, and collards, as these can contain high pesticide levels.

Instructions

Prepare the Goat Cheese & Pecans 

  1. Slice the goat cheese into 4 rounds, shaping them with your hands if they crumble a bit. Freezer rounds for 10 to 15 minutes. 
  2. Place the dressing ingredients in a mason jar. Seal and shake until emulsified. Taste and adjust seasoning if needed, then set aside. 
  3. Place the flour in one bowl, the egg in a second bowl, and the panko breadcrumbs mixed with ⅛ teaspoon salt in a third bowl. 
  4. Coat the goat cheese first in the flour, then in the egg, then into the breadcrumbs, pressing to coat the goat cheese thoroughly and evenly all over. Freeze goat cheese for 10 minutes. 
  5. Toss the pecans with maple syrup and ⅛ teaspoon salt.  

Cook the Pecans  

  1. Insert the crisper plate into the air fryer basket. 
  2. Select the Air Fry function, adjust the temperature to 400°F and time to 4 minutes, then tap Start/Pause to preheat. 
  3. Line the crisper plate with parchment paper, then place the pecans on top of the parchment paper. 
  4. Select the Bake function, adjust the temperature to 330°F and time to 7 minutes, then tap Start/Pause
  5. Remove the pecans when fragrant, golden, and caramelized. Remove the parchment paper. 

Cook the Goat Cheese & Assemble 

  1. Spray the goat cheese with olive oil spray, then place onto the crisper plate.  
  2. Select the Air Fry function at 385°F and adjust time to 6 minutes, then tap Start/Pause
  3. Remove goat cheese when golden brown and crispy. 
  4. Dress the mixed greens with dressing, then arrange onto a serving plate. Top with berries, maple pecans, and crispy goat cheese and serve. 

Chef Notes: You can prep the breaded goat cheese 24 hours in advance and cook right before serving to save time.
