PREPARING RIB EYE ROAST

  1. Mix the thyme, rosemary, salt, black pepper, and light brown sugar in a bowl and stir to combine. 
  2. Secure the ribeye roast together by tying with kitchen twine. Start from underneath the roast then come up to the top. Tie a knot and cut off excess twine. Repeat in areas between the ribs about 1 to 2 inches apart.  
  3. Pat the ribeye roast dry with paper towels and apply the seasoning blend all over. 
  4. Refrigerate the roast uncovered for 30 minutes or up to an hour. 
  5. Remove the ribeye roast 30 minutes before cooking. 
  6. Rub softened butter on all sides of the roast.
