How to Pick Ribeye Roast

Boneless ribeye roast will fit into the air fryer better than bone-in. Trim some, but not all, of the fat cap off the ribeye for an easier fit.

Instructions

PREPARING RIB EYE ROAST

  1. Mix the thyme, rosemary, salt, black pepper, and light brown sugar in a bowl and stir to combine. 
  2. Secure the ribeye roast together by tying with kitchen twine. Start from underneath the roast then come up to the top. Tie a knot and cut off excess twine. Repeat in areas between the ribs about 1 to 2 inches apart.  
  3. Pat the ribeye roast dry with paper towels and apply the seasoning blend all over. 
  4. Refrigerate the roast uncovered for 30 minutes or up to an hour. 
  5. Remove the ribeye roast 30 minutes before cooking. 
  6. Rub softened butter on all sides of the roast. 

COOKING RIB EYE ROAST

  1. Remove the crisper plate from the air fryer basket. 
  2. Select the Preheat function, adjust temperature to 350°F, then tap Start/Pause. 
  3. Place the ribeye roast directly into the preheated basket, fat-side down. 
  4. Select the Bake function, adjust temperature to 375°F and time to 40 minutes, then tap Start/Pause
  5. Flip the ribeye roast fat-side up when done. 
  6. Select the Bake function, adjust temperature to 375°F and time to 40 minutes, then tap Start/Pause
  7. Remove the ribeye roast when the internal temperature reaches 125°F for medium-rare, or until it reaches desired doneness. 
  8. Cover the roast with aluminum foil and let stand for 20 minutes before carving. Slice into desired thickness, then serve. 

Chef Notes: You can use the rendered fat from the prime rib to make a base for any gravy or au jus.
