Kimchi is a brightly colored Korean side dish that consists of salted and fermented vegetables and packs a flavorful punch. It also contains fiber and probiotics, which are shown to benefit digestive health!

Instructions

  1. Remove the crisper plate from the air fryer basket.  
  2. Select the Air Fry function, adjust temperature to 400°F and time to 4 minutes, then tap Start/Pause to preheat.  
  3. Place the beaten eggs directly into the air fryer basket.  
  4. Select the Air Fry function, adjust temperature to 360°F and time to 3 minutes, then tap Start/Pause.  
  5. Scramble the eggs with a wooden spoon, then add the cauliflower rice, peas and carrots, edamame, scallion, garlic, kimchi, tamari, sesame oil, ginger, and red pepper flakes and stir to combine.  
  6. Select the Air Fry function, adjust temperature to 400°F and time to 6 minutes, tap Shake, then tap Start/Pause.  
  7. Stir halfway through cooking. The Shake Function will let you know when. 
  8. Remove fried rice when golden brown. Transfer to a bowl, garnish with cilantro and cashews, then serve.
