How to Pick Pork Shoulder:

Picking boneless will help the roast cook fast. If you prefer skin on pork shoulder, you can crisp the skin by Air Frying at 450°F for 4 minutes.

You can also use pork butt if you cannot find pork shoulder.

Instructions

  1. Remove pork shoulder from the refrigerator 15 minutes before prepping. Pat the pork shoulder dry and rub with 1 tablespoon avocado oil. 
  2. Mix rosemary, thyme, garlic powder, 1 teaspoon salt, and ½ teaspoon pepper in a small bowl and rub all over the pork shoulder. 
  3. Add dates, garlic, walnuts, shallots, and butter into the sauce pot, then heat on medium heat. Cook until shallots become translucent.  
  4. Pour in balsamic vinegar and cook for another 2 minutes. 
  5. Wash brussels sprouts and pat dry. Cut into halves. 
  6. Toss brussels sprouts with 1 tablespoon avocado oil, ½ teaspoon salt, and ⅛ teaspoon pepper. 
  7. Place the crisper plate into the air fryer basket. 
  8. Select the Air Fry function, adjust the temperature to 450°F and time to 6 minutes, then tap Start/Pause to preheat.  
  9. Place brussels sprout onto the preheated crisper plate. 
  10. Select the Air Fry function at 10 minutes and adjust the temperature to 400°F, then tap Start/Pause.  
  11. Shake halfway through cooking. 
  12. Remove the brussels sprouts when done and add into large bowl. Pour the date mixture on top and toss well. 
  13. Wipe the inside of the air fryer basket once it has cooled. 
  14. Place the pork shoulder onto the preheated crisper plate.  
  15. Select the Bake function, adjust the temperature to 350°F and time to 1 hour, then tap Start/Pause
  16. Remove pork shoulder from the air fryer, place on a plate, and cover with aluminum foil. Let rest for 15 minutes. 
  17. Slice pork shoulders into ½-inch slices and serve with brussels sprouts. 

Chef Notes: Wrapping the pork shoulder and letting it rest will help keep the roast moist.
