A vibrant medley of grains, fresh greens, and caramelized roasted vegetables comes together under a silky date vinaigrette, adding the perfect touch of natural sweetness to this balanced dish.

How to Pick Dates:

Medjool dates are easier to blend since they are softer. If medjool dates are harder to come by, you can use ½ tablespoon-1 tablespoon of date syrup.

Ingredient Swaps:

You can use any grain or legumes instead of farro.

Broccolini is rich in fiber and vitamin C, nutrients that may support healthy digestion and help maintain immune function.

Date vinaigrette

Instructions

  1. Blend the vinaigrette ingredients EXCEPT the shallots until smooth. Stir in the minced shallots then set aside. 
  2. Coat broccolini and zucchini with 1 tablespoon of avocado oil and half the seasoning. Mix to combine. 
  3. Place crisper plate into the air fryer. 
  4. Select Air Fry function, adjust temperature to 450°F and set time to 5 minutes then press Start/Pause. 
  5. Add the broccolini and zucchini onto the preheated crisper plate. 
  6. Select Roast function and set time to 12 minutes then press Start/Pause.  
  7. Shake halfway through cooking. 
  8. Remove when done and set aside. 
  9. Coat brussels sprouts and sweet potatoes with 1 tablespoon of oil then the rest of the seasoning. 
  10. Add the vegetables into the basket. 
  11. Select Roast function and set time to 18 minutes then press Start/Pause.  
  12. Shake halfway through cooking. 
  13. Remove when done. 
  14. Assemble by placing farrow into the bowl, adding the vegetables, mixed greens, and drizzle on the vinaigrette. Serve immediately. 

Chef Notes: Add more protein to this dish by serving it with protein of choice.
