Farro is an ancient grain loaded with fiber and minerals. With a drizzle of zesty herb yogurt sauce, sprinkles of vibrant seasonings, and added heartiness with boiled eggs, this recipe is a meal prepper’s dream.

Farro is a nutrient-dense grain that adds a unique spin to many dishes.It’s also the Italian term for ancient wheat grain! When cooked, this whole grain has a wonderful texture and is rich in both protein and fiber, which helps nourish our beneficial gut bacteria.

Instructions

  1. Place all the herby yogurt sauce ingredients in a blender or food processor and blend until smooth. Taste and adjust seasonings as needed. Transfer sauce to a sealed jar and store in the refrigerator.  
  2. Place the crisper plate into the air fryer basket.  
  3. Select the Air Fry function, adjust temperature to 400°F and time to 4 minutes, then tap Start/Pause to preheat.  
  4. Place the carrots and broccolini in separate bowls. Combine the olive oil, cumin, coriander, smoked paprika, salt, and pepper in a small bowl, then divide evenly between the carrots and broccolini. Toss to evenly coat the vegetables, and adjust seasonings as needed.   
  5. Place the carrots carefully onto the preheated crisper plate.  
  6. Select the Air Fry function, adjust temperature to 400°F and time to 8 minutes, then tap Start/Pause.  
  7. Add the broccolini on top of the carrots.  
  8. Select the Air Fry function, adjust temperature to 400°F and time to 6 minutes, then tap Start/Pause.  
  9. Remove vegetables when caramelized and tender.  
  10. Divide the cooked farro among bowls or meal prep containers, then top with carrots, broccolini, medium-boiled egg, chickpeas, pumpkin seeds, and a drizzle of herby yogurt sauce and serve.
