Instructions

COOK CHORIZO AND EGG

  1. Remove the crisper plate from the air fryer basket. 
  2. Select the Preheat function, adjust temperature to 425°F, then tap Start/Pause
  3. Coat preheated basket lightly with oil spray and add in chorizo. 
  4. Select the Air Fry function at 10 minutes, adjust temperature to 425°F, then tap Start/Pause. 
  5. Flip after 4 minutes and break up the chorizo then add in the beaten egg. Stir well and return the basket to the air fryer.  
  6. Remove when the chorizo and egg are fully cooked and set aside for assembly. 

ASSEMBLE TOSTADAS

  1. Assemble on tostada shells by spreading 2-3 tablespoons of refried beans, queso fresco, cooked chorizo egg mixture, sliced radishes, avocado, cilantro leaves, and pickled red onions. Serve with salsa.

Chef Notes: You can cook the eggs ahead of time and reheat them to serve the next day.
