How To Pick Ribs

To pick the best baby back ribs, select racks with 1-inch thick, even meat coverage (loin meat) over the bones, avoiding "shiners" (exposed bones from over-trimming). Choose ribs with good marbling for moisture, straight bones for even cooking, and firm, pinkish-red meat in tight, unpunctured packaging.

Ingredient Swaps

Swap the spices with your favorite spice rub or omit and just use salt and pepper.

Instructions

Brine the Ribs 

  1. Cut the rack of ribs into 3 equal sections.  
  2. Whisk the water, salt, brown sugar, and liquid smoke in a large container or bowl until the sugar has dissolved. Add the rib sections, pressing to submerge. Cover container or bowl and refrigerate for 4 hours. 
  3. Remove rib sections from the brine, then pat dry with paper towels. 

Cook the Ribs 

  1. Combine the smoked salt, pepper, granulated garlic, smoked paprika, and cayenne pepper in a small bowl, then season both sides of the ribs.  
  2. Insert the crisper plate into the air fryer basket. 
  3. Place the rib sections into the basket. 
  4. Select the Bake function, adjust the temperature to 260°F and time to 1 hour, then tap Start/Pause.  
  5. Flip ribs over halfway and reset the time: Select the Bake function, adjust the temperature to 260°F and time to 1 hour, then tap Start/Pause
  6. Remove ribs when they reach an internal temperature of 205°F. 
  7. Brush a layer of BBQ sauce over the rib sections. 
  8. Select the Air Fry function, adjust the temperature to 450°F and time to 3 minutes, then tap Start/Pause
  9. Remove ribs when golden-brown and the BBQ sauce is caramelized. 
  10. Cut into individual ribs, then serve. 

Chef Notes: When buying your rack of ribs, it’s best not to go over 2 ½ pounds to ensure they will all fit inside the air fryer.
