Labneh can be found near the Mediterranean refrigerated section or near the yogurt. If you cannot find labneh, you can strain Greek yogurt overnight.

One of the standout ingredients in this layered dip is labneh—a rich, creamy, fermented dairy spread. It’s low in lactose and full of good stuff like protein, healthy fats, calcium, and B vitamins. Crispy Quinoa

Instructions

BAKING THE QUINOA: 

  1. Combine the ingredients for the crispy quinoa into a bowl and mix well. 
  2. Place the crisper plate into the air fryer basket, then place a sheet of parchment paper onto the crisper plate. 
  3. Spread the quinoa mixture onto the parchment paper, making the layer as thin as possible. 
  4. Select the Bake function, adjust temperature to 400°F and time to 22 minutes, then tap Start/Pause.  
  5. Stir halfway through cooking and break up any chunk.
  6. Remove when done, then set aside to cool completely.

PREP REST OF INGREDIENTS: 

  1. Whisk together the ingredients for the labneh. Set aside. 
  2. Mix together the extra-virgin olive oil and balsamic vinegar until well combined.
  3. Add the cucumber, feta cheese, red onion, tomato, Kalamata olives, garlic, and chopped parsley into a small bowl and mix well. Season with salt and pepper to taste.

ASSEMBLE: 

  1. Layer the dip starting from the bottom up by placing hummus, labneh, the cucumber-tomato mixture, and then quinoa. Garnish with more chopped parsley, if desired. Serve with pita chips and crudité.

Chef Notes: The longer the tomato-cucumber mixture marinates, the tastier it will get. You can make that ahead of time to lessen the prep time for when you serve the dip.
