Recipe Intro: Plump, extra-jumbo shrimp sizzle in a blend of olive oil and golden melted butter, soaking up the rich aroma of freshly minced garlic. A splash of dry white wine and a bright squeeze of lemon juice awaken the senses, while crushed red pepper flakes add a flicker of heat. Finished with a shower of chopped fresh parsley and a whisper of cracked black pepper, this shrimp scampi is a bold, buttery symphony that brings the coast to your plate with every garlicky, citrus-kissed bite. 

How To Pick Shrimp

To pick extra jumbo shrimp, look for a "16/20" count per pound, which ensures 16-20 large pieces per pound. Choose firm, translucent, or light grey shells without black spots or slimy texture. Avoid strong fishy odors; fresh shrimp should smell faintly of salt water. Frozen options are often superior in quality, as they are usually frozen immediately after being caught.

Instructions

  1. Remove the crisper plate from the air fryer basket. 
  2. Select the Preheat function, adjust temperature to 450°F, then tap Start/Pause. 
  3. Mix all ingredients except the shrimp and parsley in a medium bowl. 
  4. Place all ingredients except the shrimp and parsley into the air fryer basket. 
  5. Select the Air Fry function, adjust the temperature to 450°F and time to 5 minutes. 
  6. Place the shrimp and parsley into the air fryer basket with the crisper plate and air fry at 450°F for 6 minutes, flipping halfway through for even cooking. 
  7. Transfer the shrimp into a bowl, then remove the crisper plate carefully with tongs and pour out the liquid into the bowl.  
  8. Serve shrimp scampi on top of pasta or with crusty bread. 

Chef Notes: For extra flavor, use the shrimp shells if deshelled when cooking with the liquid in the air fryer and remove the shells before cooking the shrimp.
