Instructions

  1. Rinse the dried guajillo and ancho chili and soak in 2 cups of water overnight.  For quicker rehydration, soak the chili in 2 cups of boiling water. 
  2. Place onion, rehydrated chili, liquid from the chili, salt, onion, garlic, cumin, oregano and chicken broth in the blender and blend until smooth. 
  3.  Add pork butt, bay leaves and the chili liquid mixture into the inner pot of the Cosori Rice Cooker
  4. Set mode to Slow Cook, adjust time to 5 hours and tap Start 
  5. Add hominy into the inner pot of the Cosori Rice Cooker when there is 1 hour left on the cooking time. 
  6. Remove when done, seasoned to taste, garnish with onion, cabbage, lime, cilantro and serve while it is hot. 

Chef Notes: Best while served hot or warm.
