How to Pick Kale

Lacinato kale is more nutrient dense versus curly kale. Avoid picking bunches that have dried stems and yellowing leaves.

Instructions

  1. Remove the crisper plate from the air fryer basket. 
  2. Select the Air Fry function, adjust temperature to 450°F and time to 4 minutes, then tap Start/Pause to preheat. 
  3. Toss kale and onion in extra-virgin olive oil. 
  4. Place kale mixture directly into the preheated basket. 
  5. Select the Bake function, adjust temperature to 400°F and time to 50 minutes, then tap Start/Pause. 
  6. Whisk together the egg whites, cottage cheese, harissa, and garlic powder until well combined. 
  7. Remove the basket after 5 minutes of cooking and pour in the egg white mixture, then stir in the diced tomatoes. Return basket to air fryer to continue cooking. 
  8. Stir every 10 minutes, breaking apart any larger chunks. It is okay if it starts to brown. This will give the scramble a hearty texture. 
  9. Remove when done and season with salt and pepper. 
  10. Portion the egg whites into 4 servings and set onto the center of the tortillas. Divide the 3 cups of roasted sweet potatoes or vegetables on top of the eggs. 
  11. Fold left and right side towards the center of the tortilla. Fold bottom flap upwards into the center and continue rolling. Serve immediately or wrap with parchment paper and freeze for a later time. 

Chef Notes: If you are freezing the burritos, make sure the burritos have fully cooled before freezing to prevent condensation.
