Let’s Hash it Out

Start your day with a nutritious, high-protein, and flavorful twist with our Air Fryer Butternut Squash Hash! This delightful breakfast dish combines hearty ground turkey with the sweet and fall-forward flavors of butternut squash, apple, kale, rosemary, and sage—cooked to crispy perfection in the air fryer. Packed with protein and fiber, this hash is not only satisfying but also a great alternative to traditional breakfast options that tend to be greasier. The air fryer makes preparation a breeze, delivering a dish that's easy to make and bursting with delicious flavors.

How to Pick Ground Turkey

When choosing ground turkey at the grocery store, consider the lean-to-fat ratio. This recipe calls for 93% lean 7% fat. Also consider freshness; raw ground turkey should be light pink or beige, but its color will dull over time. If the meat is brown, gray, green, or moldy, it’s best to throw it away.

Ingredient Swaps

Swap ground chicken for the ground turkey. You can also swap the fresh herbs with dried herbs; just halve the amount.

Nutritional Information

Did you know that one cup of Butternut Squash has nearly 7 grams of fiber? Butternut squash is a great source of soluble fiber, which acts as a natural stool softener and can help prevent constipation.

COOKING BUTTERNUT SQUASH HASH

1. Remove the crisper plate from the air fryer basket.
2. Select the Preheat function, adjust temperature to 385°F, then tap Start/Pause.
3. Combine the ground turkey, rosemary, sage, garlic powder, smoked paprika, red pepper flakes, ½ teaspoon salt, and ¼ teaspoon pepper in a bowl. Spread the mixture in an even layer directly into the bottom of the air fryer basket in a ¼-inch-thick layer.
4. Place the crisper plate on top of the ground turkey mixture. Place the butternut squash, onion, and apple on the crisper plate. Spray with avocado oil, then season with ¼ teaspoon salt and ¼ teaspoon pepper.
5. Select the Air Fry function, adjust time to 15 minutes, then tap Start/Pause.
6. Stir in the kale leaves in with the veggies when 3 minutes remain on the cook time.
7. Remove the crisper plate carefully using a kitchen towel, then slide the roasted veggies into the turkey mixture. Break up the turkey with a wooden spoon and mix with the veggies to evenly combine.
8. Divide the hash onto 2 plates, top each plate with a cooked egg, then serve.

Chef Notes: This fall-inspired breakfast is loaded with protein and fiber, ensuring you’ll stay full and satisfied until lunch. This hash is also perfect for meal prepping, just top with a cooked egg on the morning you eat it.
