You won’t be disappointed with this always-juicy chicken salad. The fruity vinaigrette balances the savory ingredients, while the feta cheese adds saltiness complimented by creamy avocado chunks and nutty pecans.

Instructions

  1. Place all the blueberry vinaigrette ingredients in a blender and blend until smooth. Taste and adjust seasoning if needed, then transfer to a jar and store in the refrigerator.  
  2. Place the crisper plate into the air fryer basket.  
  3. Select the Air Fry function at 385°F, adjust time to 4 minutes, then tap Start/Pause to preheat.  
  4. Season chicken tenderloins with garlic powder, thyme, salt, and pepper. Place chicken carefully onto the preheated crisper plate, then spray with olive oil spray.   
  5. Select the Air Fry function at 385°F, adjust time to 10 minutes, then tap Start/Pause.  
  6. Remove chicken when golden brown, then allow to rest for 10 minutes before slicing.  
  7. Assemble each salad in bowls or meal prep containers with 1½ cups leafy greens, ¼ cup radicchio, 2 tablespoons sliced red onion, and 1 tablespoon each of avocado, pecans, feta, and blueberries. Top with sliced chicken and drizzle with blueberry vinaigrette.
