Instructions

  1. Season both sides of the chicken cutlets with ½ teaspoon salt and ¼ teaspoon pepper. 
  2. Add flour into a shallow plate and coat both sides of the cutlets in flour. 
  3. Whisk together egg and water. 
  4. Dredge the cutlets in egg wash on both sides. 
  5. Pour breadcrumbs into a shallow dish and coat the chicken cutlets in the breadcrumb. Pat on the crumbs firmly. Set aside while the air fryer preheats. 
  6. Coat asparagus with ½ tablespoons extra-virgin olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper. 
  7. Place the crisper plate into the air fryer basket.  
  8. Select the Air Fry function, adjust the temperature and time to 450°F for 7 minutes, then tap Start/Pause to preheat.  
  9. Place the asparagus onto the preheated crisper plate. 
  10. Select the Air Fry function, adjust temperature to 450°F and time to 8 minutes, then tap Start/Pause.  
  11. Shake the asparagus halfway through cooking. 
  12. Remove the asparagus when done. 
  13. Place the chicken onto the preheated crisper plate.  
  14. Select the Air Fry function, adjust temperature to 375°F and time to 17 minutes, then tap Start/Pause.  
  15. Flip the chicken halfway through cooking. 
  16. Add sliced almonds into sauce pot and set on low heat to toast. Remove from heat when almond slices become slightly toasted. 
  17. Add remaining ½ tablespoon of extra-virgin olive oil, garlic, and shallots into the sauce pot, then set on low heat. Cook for 2 to 3 minutes, or until shallots become translucent. 
  18. Pour chicken broth and dry white wine into the sauce pot. Let simmer until it has been reduced to half.  
  19. Take the pot off heat and stir in the butter. Once emulsified, stir in the almonds and set aside. 
  20. Assemble by placing asparagus on a plate then place chicken cutlet on top. Spoon almondine and sauce on top of the cutlet. Garnish with chives and serve with lemon wedges.  

Chef Notes: Trim asparagus by holding it on each end and bending upwards. The asparagus will naturally snap at the perfectlength. Discard the stems.
