How to Pick Feta

You can use either crumbled or a block of feta crumbled by hand. You can also experiment with flavored feta as well.

Ingredient Swaps

Swap out the herbs for whichever herbs you like. Swap out the sesame seeds for pumpkin seeds to keep this sesame-free. Swap out the almonds for extra sunflower or pumpkin seeds and omit the pistachios for the whipped feta to keep this nut-free.

Instructions

Making the Crisps

  1. Stir together the raisins, sunflower seeds, almonds, sesame seeds, and chia seeds in a bowl. 
  2. Mix the all-purpose flour, whole wheat flour, baking soda, and salt in a separate bowl until well combined. 
  3. Pour in the kefir yogurt and maple syrup into the flour mixture, then stir until a shaggy batter forms. 
  4. Fold in the fruit-nut mixture until well combined. 
  5. Coat the mini loaf pans with oil spray and line with parchment paper. Divide the batter amongst the three pans. 
  6. Remove the crisper plate from the basket and place the pans directly into the basket. 
  7. Select the Bake function, adjust temperature to 320°F and time to 26 minutes, then tap Start/Pause.  
  8. Remove when done and let cool for 10 minutes before unmolding. Let the loaves cool completely. 
  9. Wrap each loaf in plastic wrap and freeze for a minimum of 3 hours.  
  10. Slice thin, horizonal slices with a serrated knife, making sure each slice is about less than ⅛-inch thick. 
  11. Place the crisper plate into the Cosori Air Fryer basket, then place one layer of crackers onto the crisper plate without them overlapping. 
  12. Select the Air Fry function, adjust temperature to 365°F and time to 7 minutes, then tap Start/Pause.  
  13. Remove when done and let cool for 10 minutes. 

Making the Whipped Feta

  1. Add the lemon zest and juice, feta, Greek yogurt, chives or dill, and extra-virgin olive oil into the food processor. Blend until smooth. 
  2. Plate the whipped feta onto a shallow plate, garnish with pistachios, hot honey, mint, parsley, and sumac. Serve cold with the crisps.  

Chef Notes: The thicker you slice the crisps, the more time it would need to be baked. If you prefer thicker crips, you may need to lower the temperature.
