How To Pick Chicken Thighs

Bone-in chicken thighs provide the best flavor once marinated. If you prefer chicken breast, you can use that as well.

You can use boneless chicken thighs for this recipe. It would take roughly 18 to 20 minutes for it to be fully cooked. Internal temperature should read 170°F.

Lemon Thyme Chicken

Instructions

  1. Stir together the garlic cloves, avocado oil, lemon juice, dried thyme, lemon zest, ½ teaspoon salt, and ¼ teaspoon pepper until well combined. 
  2. Pat the chicken thighs dry with a paper towel, then add into the sealable plastic bag. 
  3. Pour the marinade into the bag, seal shut and massage the marinade onto the chicken thighs. Place in refrigerator to marinate for a minimum of 30 minutes.  
  4. Combine red bell pepper, yellow bell pepper, zucchini, mushrooms, and red onion into a bowl and mix.  
  5. Place the crisper plate into the air fryer basket.   
  6. Select the Air Fry function, adjust the temperature to 450°F and time to 7 minutes, then tap Start/Pause to preheat.  
  7. Spray the preheated crisper plate with oil spray. 
  8. Remove chicken thighs from bag and shake excess marinade off. Place skin-side down onto the preheated crisper plate. 
  9. Select the Air Fry function at 385°F and adjust time to 22 minutes, then tap Start/Pause.  
  10. Flip chicken halfway through cooking. 
  11. Remove chicken when done and set aside. 
  12. Remove the crisper plate carefully and add the vegetables directly into the air fryer basket. 
  13. Select the Air Fry function, adjust temperature to 450°F and time to 18 minutes, then tap Start/Pause
  14. Shake basket halfway through cooking. 
  15. Whisk garlic, extra-virgin olive oil, balsamic vinegar, dried oregano, ¼ teaspoon salt, and ⅛ teaspoon pepper into a medium bowl. 
  16. Remove when done, toss hot vegetables into the vinaigrette and mix. Let sit for 10 minutes. 
  17. Serve the chicken with the side of roasted vegetables.  

Chef Notes: 30 minutes for marinating is plenty of time but for maximum flavor, 1 hour is recommended.
