This hearty hash mixes fibrous kale, protein-packed turkey, and a hint of apple for a kick of sweetness. Brought to life with an array of flavorful spices, this unique breakfast hash is a quick and easy staple for brunches and midday soirées.

Butternut squash is typically harvested in the fall but can be found and stored through the winter months. This whole-food carbohydrate source is filled with potassium, vitamin A, and fiber, making it a great option to incorporate into the diet.

Instructions

  1. Remove the crisper plate from the air fryer basket.  
  2. Select the Air Fry function at 385°F, adjust time to 4 minutes, then tap Start/Pause to preheat. 
  3. Combine the ground turkey, rosemary, sage, garlic powder, smoked paprika, red pepper flakes, ¼ teaspoon salt, and ¼ teaspoon pepper in a bowl.  
  4. Spread the mixture carefully in an even ¼-inch-thick layer on the bottom of the preheated basket. 
  5. Place the crisper plate on top of the ground turkey mixture. Place the butternut squash, onion, and apple onto the crisper plate. Spray with avocado oil, then season with the remaining ¼ teaspoon salt and ¼ teaspoon pepper.  
  6. Select the Air Fry function at 385°F, adjust time to 13 minutes, then tap Start/Pause.  
  7. Stir the kale leaves in with the veggies when 3 minutes remain on the cook time. 
  8. Remove the veggies when golden brown and tender. Carefully remove the crisper plate using a kitchen towel, then slide the roasted veggies into the turkey. Break up the turkey with a wooden spoon and mix with the veggies to evenly combine.  
  9. Divide the hash onto 2 plates, then top each plate with a cooked egg and serve.
