Lemony Chicken Marinade

Instructions

MAKING MARINADE AND VINAIGRETTE: 

  1. Whisk together all the marinade ingredients except for the chicken in a bowl. 
  2. Add the chicken tenderloins and mix to combine. Cover with plastic wrap and let marinate for up to 30 minutes. 
  3. Add all the ingredients for the date vinaigrette into a food processor and blend on high until dates have been broken into the size of course black pepper. Set aside.

COOK THE CHICKEN: 

  1. Place the crisper plate into the air fryer basket. 
  2. Select the Preheat function, adjust temperature to 425°F, then tap Start/Pause.
  3. Place the marinated chicken onto the preheated crisper plate.
  4. Select the Roast function at 425°F for 12 minutes, then tap Start/Pause.
  5. Flip halfway through cooking.
  6. Remove when done. Set aside and let rest for about 10 to 15 minutes, then chop the chicken into bite-sized pieces.

ASSEMBLE THE BOWL: 

  1. Assemble by placing arugula or mixed greens at the bottom of the bowl, followed by the bulgur, cherry tomatoes, cucumbers, feta cheese, red onion, and olives. Garnish with fresh dill and parsley, then serve with the date vinaigrette. 

Keep everything separate if you’re not building the bowls right away. Each bowl can be refrigerated for up to 2 days.
