Instructions

  1. Whisk eggs, milk, granulated garlic, ¼ teaspoon salt, and ⅛ teaspoon pepper until well combined, then fold in the chopped spinach and set aside. 
  2. Place the crisper plate into the air fryer basket.  
  3. Place silicone muffin cups into the basket. 
  4. Select the Air Fry function, adjust temperature to 425°F and time to 7 minutes, then tap Start/Pause to preheat.  
  5. Coat silicone muffin cups with oil spray. 
  6. Fill each silicone muffin cup ¾ of the way full.  
  7. Select the Bake function, adjust temperature to 300°F and time to 10 minutes, then tap Start/Pause.  
  8. Top egg bites with goat cheese during the last 3 minutes of cooking time left. 
  9. Remove egg bites and set aside to cool. 
  10. Carefully remove crisper plate with a kitchen towel or oven mitt. 
  11. Place potatoes into a large bowl with avocado oil, garlic powder, ½ teaspoon salt, ¼ teaspoon pepper, and smoked paprika, then toss to coat. 
  12. Add potatoes directly into the preheated basket. 
  13. Select the Air Fry function, adjust temperature to 400°F and time to 28 minutes, then tap Start/Pause.  
  14. Shake the basket halfway through cooking, add bell peppers and onions, then stir. Continue cooking. 
  15. Remove both baskets when done. Pop out egg bites and serve with breakfast potatoes. 

Chef Notes: Egg Bites will keep well in the freezer and can be reheated when needed.
