Perfectly Crispy and Creamy Twice-Baked Mashed Potatoes

How to Pick Potatoes

Russets make the best baking potatoes. Medium-sized potatoes that aren’t too bulbous are best for this recipe.

You can substitute russet potatoes for sweet potatoes! Add the heated milk gradually to prevent your mashed sweet potatoes from turning into soup.

Instructions

MAKING AIR FRYER MASH POTATOES

  1. Prick potatoes with a fork all over, then wrap with aluminum foil. 
  2. Place the crisper plate into the air fryer basket. 
  3. Select the Preheat function, adjust temperature to 395°F, then tap Start/Pause
  4. Place the wrapped potatoes onto the preheated crisper plate. 
  5. Select the Air Fry function, adjust temperature to 395°F and time to 60 minutes, then tap Start/Pause
  6. Flip halfway through cooking. 
  7. Remove the potatoes when done and set aside to cool. 
  8. Heat milk, butter, garlic, thyme, and rosemary in a small sauce pot on low heat on the stove until it starts to simmer, then remove from heat. 
  9. Peel potatoes carefully by using tongs to pull off the skin, then place the potatoes into a large bowl. 
  10. Mash the potatoes to your preferred consistency with a potato masher, then strain the heated milk mixture into the potatoes. 
  11. Stir to combine, then add mozzarella cheese, salt, and pepper to taste.  
  12. Pour the potatoes into the square pan. 
  13. Stir together the ingredients for the topping, then sprinkle on top of the mashed potatoes. 
  14. Remove the crisper plate from the basket and place the square pan directly into the basket. 
  15. Select the Bake function, adjust temperature to 380°F and time to 8 minutes, then tap Start/Pause. If you prefer the top to be crispier, increase time by 2 minute intervals.  
  16. Remove when done and serve warm. 

Chef Notes: You can use a kitchen towel to hold the hot potatoes and peel with a small knife or tongs.
