Yogurt Sauce

Instructions

  1. Remove the casings off the Spanish chorizo and break up into large chunks. 
  2. Add the chunks into the bowl of the food processor and pulse until smooth. 
  3. Stuff dates with about 1 to 2 teaspoons of the ground chorizo. 
  4. Add pine nuts into the air fryer basket. 
  5. Place crisper plate into the basket. 
  6. Add the dates onto the crisper plate and lightly mist with cooking oil spray. 
  7. Select the Air Fry function, adjust temperature to 375°F and time to 9 minutes, then tap Start/Pause
  8. Stir together the ingredients for the yogurt sauce and set aside. 
  9. Remove the dates when done. 
  10. Carefully remove crisper plate and pour out pine nuts into a bowl. Let cool. 
  11. Assemble by spreading yogurt sauce onto the plate, sprinkle pine nuts onto the yogurt, top with dates, garnish with fresh thyme, then serve. 

Chef Notes: Medjool dates are preferred for this recipe since they keep their softness when air fried.
