Vegan Smoked “Salmon”

+

4 cups water

+

2 tablespoons kosher salt

+

1 tablespoon sugar

+

2 teaspoons smoked paprika

+

1 sprig of dill, leaves and stem separated

+

½ ounce kombu (dried seaweed)

+

1 large carrot, thinly shaved or sliced

+

1 tablespoon olive oil

+

A pinch of ground black pepper

+

3 tablespoons plant-based sour cream or yogurt

+

2 tablespoons chives, chopped


Hashbrowns

+

5 cups frozen shredded potatoes

+

3 tablespoons plant-based butter, melted

+

½ teaspoon kosher salt

+

½ teaspoon garlic powder

+

Directions

STEP 1

Combine the water, salt, sugar, smoked paprika, dill stems, and kombu in a medium saucepot and mix until well combined, then bring to a boil.

STEP 2

Add the shaved carrots to the saucepot and turn off the heat. Let it steep for 5 minutes until the carrots are flexible.

STEP 3

Strain the carrots through a colander and set aside to cool for 10 minutes.

STEP 4

Mix the shredded potatoes, melted butter, salt, and garlic powder together in a bowl.

STEP 5

Remove the crisper plate from the Cosori Smart Air Fryer basket, then spray the basket with oil spray.

STEP 6

Place the potato mixture directly into the air fryer basket and spread out evenly, then spray with more oil spray.

STEP 7

Select the Air Fry function, adjust temperature to 400°F and time to 15 minutes, then press Start/Pause.

STEP 8

Toss the carrots with olive oil and black pepper until fully coated.

STEP 9

Remove the hash browns when done.

STEP 10

Serve the carrots over the hash browns, topped with sour cream and garnished with chives and dill leaves.
