Let's cook

Crust

  1. Add the butter cookies into the food processor and pulse until broken down. Stream in melted butter while pulsing until mixture comes together to resemble wet sand.
  2. Place the strips of parchment paper into the square pan, perpendicular and overlapping each other to create a sling.
  3. Pour the cookie mixture into the pan and pat firmly into the bottom.
  4. Insert the crisper plate into the air fryer basket.
  5. Select the Air Fry function, adjust temperature to 325°F and time to 8 minutes, then tap Start/Pause to preheat.
  6. Place the pan onto the preheated crisper plate.
  7. Select the Bake function, adjust temperature to 325°F and time to 7 minutes, then tap Start/Pause.
  8. Remove when done and let cool while you prepare the rest of the cheesecake.

Cinnamon Apple

  1. Slice the apples into quarters, then place the wedges on the flat side and slice above the core at an angle to remove it.
  2. Slice the wedges into thin slices and add into a large bowl. You may use a mandolin slicer if you have one.
  3. Add the light brown sugar, lemon juice, lemon zest, cinnamon, and nutmeg into the bowl. Toss to coat.

Cream Cheese Filling & Crumb Topping

  1. Whisk together the softened cream cheese until smooth, then add the eggs, sugar, vanilla extract, and salt into a bowl. Whisk well.
  2. Combine the ingredients for the crumb topping in another bowl. Use your hands to work the ingredients together.
  3. Pour the cream cheese mixture onto the cooled crust.
  4. Layer the cinnamon apple mixture on top of the cheesecake filling.
  5. Top the cheesecake with the crumb topping.

Bake

  1. Cover the pan tightly with aluminum foil.
  2. Select the Air Fry function, adjust temperature to 450°F and time to 8 minutes, then tap Start/Pause to preheat.
  3. Place the square pan carefully onto the preheated basket.
  4. Select the Bake function, adjust temperature to 350°F and time to 50 minutes, then tap Start/Pause.
  5. Remove the foil during the last 5 minutes.
  6. Let the cheesecake sit in the air fryer for 15 minutes before removing from the basket.
  7. Chill the cheesecake for a minimum of 3 hours in the fridge, but best results are overnight.
  8. Lift the cheesecake out of the pan by the parchment paper sling.
  9. Slice into 9 pieces and drizzle with caramel sauce, then serve.
