Ingredients

1½ pounds baby Yukon gold potatoes, boiled until soft

+

2½ teaspoons plus 1 teaspoon kosher salt, divided

+

1½ teaspoons freshly ground black pepper

+

4 tablespoons unsalted butter, melted

+

¾ cup heavy whipping cream, divided

+

1 large egg

+

1½ cups kale, chopped

+

4 garlic cloves, minced

+

⅔ cup all-purpose flour

+

2½ cups panko breadcrumbs

+

Directions

STEP 1

Mash the boiled potatoes until smooth in a large bowl.

STEP 2

Whisk 2½ teaspoons salt, pepper, melted butter, ¼ cup cream, and egg together in a separate small bowl.

STEP 3

Pour the cream and egg mixture into the potatoes and stir to combine.

STEP 4

Fold in the kale and garlic to the mashed potatoes until evenly distributed. 

STEP 5

Set up a breading station with the flour in one bowl, the remaining ½ cup cream in a second bowl, and the panko breadcrumbs and remaining 1 teaspoon of salt in a third bowl.

STEP 6

Shape the potatoes into 12 golf ball-sized balls. Roll each ball in flour, dip in cream, and finally dredge in panko breadcrumbs.

STEP 7

Place the breaded croquettes on a clean plate or tray.

STEP 8

Freeze the croquettes for 2 hours.

STEP 9

Place the crisper plate into the Cosori Smart Air Fryer basket, then place the croquettes onto the crisper plate and spray all over with oil spray.

STEP 10

Select the Frozen function, adjust time to 10 minutes, then press Start/Pause.

STEP 11

Remove the croquettes when done and serve.
