Grilled Beets with Whipped Ricotta & Herbs

2 large beets, peeled and sliced into ¼-inch rounds

2½ tablespoons olive oil, divided, plus more for drizzling
+
3 teaspoons kosher salt, divided
+
1½ cups whole milk ricotta cheese
+
¼ cup fresh mint leaves, chopped, for topping
+
¼ cup fresh basil leaves, chopped, for topping
+
Freshly ground black pepper, for seasoning
+
Flaky sea salt, for seasoning

Food processor fitted with the blade attachment or blender

Directions
STEP 1
Place the cooking pot into the base of the Cosori Indoor Grill, followed by the grill grate.
STEP 2
Select the Air Grill function on max heat, press Shake, then press Start/Pause to preheat.
STEP 3
Toss the beets with 1 tablespoon of olive oil and 1 teaspoon of salt in a large bowl.
STEP 4
Place the beets onto the preheated grill grate, then close the lid.
STEP 5
Flip the beets halfway through cooking. The Shake Reminder will let you know when.
STEP 6
Combine the ricotta cheese and remaining olive oil and salt in a food processor fitted with the blade attachment or a blender. Blend until very smooth, then scoop into a serving bowl and chill until ready to serve.
STEP 7
Remove the beets from the grill when done and let cool slightly.
STEP 8
Serve the beets on top of the whipped ricotta, topped with the fresh mint and basil and drizzled with olive oil. Season with pepper and flaky sea salt.
