Grilled Reuben Sandwiches

Ingredients
Dressing:

¼ cup mayonnaise

2½ tablespoons ketchup
+
½ teaspoon Worcestershire sauce
+
½ tablespoon grated horseradish, fresh
+
¼ teaspoon Dijon mustard
+
1 teaspoon white sugar
+
Kosher salt, to taste
+
Ground black pepper, to taste
+
2 teaspoons cornichons, minced (optional)
+
2 teaspoons yellow onion, minced (optional)
Sandwiches:
+
4 slices rustic rye or pumpernickel bread (1-inch thick each)
+
4 tablespoons dressing, divided
+
½ cup sauerkraut, drained, divided
+
½ pound corned beef, thinly sliced, divided
+
6 slices Swiss or Gruyère cheese, divided
+

Directions
STEP 1
Mix all dressing ingredients together in a small bowl.
STEP 2
Spread ½ tablespoon of dressing on both sides of each slice of bread.
STEP 3
Squeeze out the excess moisture from the sauerkraut. Pat dry with paper towels and set aside.
STEP 4
Top 2 slices of bread with ¼ pound of corned beef, ¼ cup of sauerkraut, and 3 slices of cheese. Finish by placing the last 2 slices of rye bread on top.
STEP 5
Place the cooking pot into the base of the Cosori Smart Indoor Grill, followed by the grill grate.
STEP 6
Select the Air Grill function on medium heat, adjust temperature to 425°F and time to 8 minutes, press Shake, then press Start/Pause to preheat.
STEP 7
Spray the preheated grill grate with oil spray.
STEP 8
Place the sandwiches onto the preheated grill grate, gently press down on each closed faced sandwich using a spatula, then close the lid.
STEP 9
Flip the sandwiches halfway through cooking, and press down again on each sandwich using a spatula. The Shake Reminder will let you know when.
STEP 10
Remove the sandwiches when done, let cool for 2 minutes, then slice in half.
STEP 11
Serve the sandwiches immediately.
