Miso-Glazed Rainbow Carrots

2 pounds rainbow carrots, cleaned & peeled

2 tablespoons miso
+
2 teaspoons light soy sauce
+
½ teaspoon sesame oil
+
¼ cup brown sugar
+
1 tablespoon rice wine vinegar

¼ teaspoon black pepper

½ teaspoon ginger, fresh, minced

2 garlic cloves, minced
+
3 tablespoons butter, melted
+
1 tablespoon fresh parsley, chopped, for garnish

Directions
STEP 1
Peel the carrots and cut into ½-inch matchsticks. Set aside in a medium bowl.
STEP 2
Whisk the rest of the ingredients together in a separate small bowl until thoroughly combined.
STEP 3
Pour the mixture over the carrots and toss until evenly coated. Let sit to marinate for at least 30 minutes.
STEP 4
Select the Preheat function on the Cosori Smart Air Fryer Toaster Oven, adjust temperature to 375°F and time to 5 minutes, then press Start/Pause.
STEP 5
Line the baking sheet with parchment paper and arrange the carrots in an even layer, being sure not to overcrowd the pan. Set the marinade aside.
STEP 6
Insert the baking sheet at mid position into the preheated oven.
STEP 7
Select the Bake function, adjust temperature to 375°F and time to 12 minutes, then press Start/Pause.
STEP 8
Bake for 10 minutes, then pull out the carrots to brush on more of the marinade before placing them back into the oven.
STEP 9
Remove the carrots when done, garnish with parsley, and serve warm.
