Quick & Easy Veggie Sandwich

Hummus veggie sandwich has been my jam lately, especially when I want fast and healthy lunch. This simple sandwich packs a lot of flavor and nutrition, making it ideal for an easy weekday meal. You can use just about any vegetables you like. I found that a variety of soft and crunchy vegetables is the key to delicious flavor and texture.

The hummus and avocado serve as a base for the sandwich and also provide protein and fiber. Add a generous amount of both so the sandwich is not dry. I like to use whole wheat 7-grain bread for its wonderful texture but any bakery-style bread will work.

Ingredient Swaps

Steaks: You can use different cuts of beef such as flank steak, skirt steak, sirloin, or even grilled chicken or portobello mushrooms for a vegetarian option.

Chimichurri Sauce: While traditional Chimichurri sauce is made with parsley, garlic, vinegar, oil, and red pepper flakes, you can customize it by using cilantro instead of parsley, adding different herbs like oregano or basil, adjusting the amount of garlic or red pepper flakes for spiciness, or using lemon juice instead of vinegar for a slightly different flavor profile.

Bread: Instead of using traditional sandwich bread, you can use ciabatta, baguette, focaccia, or even tortillas for a wrap-style sandwich.

Cheese: While not traditionally included in steak Chimichurri sandwiches, you can add cheese such as provolone, Monterey Jack, or pepper jack for extra flavor. Or omit it altogether for a dairy-free option.

Vegetables: You can add or substitute various vegetables such as roasted bell peppers, caramelized onions, avocado slices, or tomato slices to add freshness and texture to your sandwiches.

Fun fact: Chimichurri sauce is a condiment, similar to pesto, made with finely chopped herbs, garlic, oil, vinegar, and spices. It’s mostly used in Argentinian cuisines. Chimichurri sauce is delicious on anything grilled, but also works great on simply steamed vegetables and roasted meats.

How to Pick Steak

Steaks: By keeping these tips in mind, you can select a steak that will be perfect for making delicious 
Chimichurri sandwiches.

Cut: Choose a cut of steak that is suitable for grilling or pan-searing, as these methods will give you the best 
flavor and texture. Popular cuts for sandwiches include flank steak, skirt steak, sirloin, or even ribeye if you 
prefer a richer flavor.

Marbling: Look for steaks with good marbling, which is the intramuscular fat that gives steak its tenderness and flavor. A moderate amount of marbling ensures juiciness and flavor without being overly fatty.

Thickness: Opt for steaks that are about 1/2 to 1 inch thick for sandwiches. Thicker steaks may take longer to cook and can be more challenging to slice thinly for sandwiches.

Freshness: Choose steaks that are bright red in color with minimal browning or discoloration. Avoid steaks that have a strong odor, as this could indicate spoilage.Grade: While not always necessary for sandwiches, you may consider the grade of the steak. Prime-grade steaks have the highest level of marbling and tenderness, followed by choice-grade and select-grade steaks.

Budget: Consider your budget and choose a steak that fits within your price range. While premium cuts like ribeye or filet mignon may be more expensive, you can still achieve great flavor with more affordable cuts like flank or skirt steak when cooked properly.

Prepping Chimichurri

  1. Whisk together the ingredients for the chimichurri until well combined, then set aside.
  2. Whisk together the dried oregano, red wine vinegar, kosher salt, black pepper, granulated garlic, and olive oil.

Prepping Chimichurri

  1. Pat dry the flank steak with paper towels and place it into the resealable plastic bag.
  2. Pour the marinade in and press out all the air before closing.
  3. Massage the steak for a minute, then set in the refrigerator to marinate for 2 hours.

Cooking the Steak

  1. Place the crisper plate into the COSORI Air Fryer basket.
  2. Select the Preheat function, adjust temperature to 450°F, then tap Start/Pause.
  3. Remove the flank steak from the bag and let the remaining marinade drip off.
  4. Coat the preheated basket with oil spray, then place the steak on top. Lightly coat the top of the steak 
with some more oil spray
  5. .Select the Broil function, adjust temperature to 450°F and time to 11 minutes, then tap Start/Pause.
  6. Flip the steak halfway through cooking.
  7. Remove the steak when done and set on a wire rack to rest for 10 minutes before slicing into ¼-inch 
thick slices.
  8. Assemble the sandwiches by spreading mayonnaise on the bottom half of the ciabatta. Starting from the bottom, place a layer of steak, followed by the arugula, and chimichurri, then top with pickled red onions. 
Place the top on the sandwich and cut the sandwich in half, then serve.2345678
