These are so quick and easy to prep for a party that you’ll have more time to mingle with your guests.By using the air fryer, you can achieve perfectly crispy skin and a fluffy interior in a fraction of the time it takes in a conventional oven. Pile on your favorite toppings like gooey melted cheese, crispy bacon, sour cream or Greek yogurt, and green onions to create a mouthwatering dish that’s sure to satisfy.

Potatoes: You can use sweet potatoes instead of russet potatoes. 

How to Pick Potatoes:

Size: Pick potatoes that are roughly the same size, so they can cook at the same rate.

Texture: Look for potatoes that are firm and clean without any cuts, bruises, or discoloration. The skin should be smooth and tightly attached to the potato.  

Color: Steer clear of potatoes that look green. They may taste bitter and contain toxins.

Instructions

PREPPING THE POTATOES

  1. Perforate the potatoes using a fork and poke throughout the entire surface. Coat the potatoes in oil spray and wrap them with aluminum foil. 
  2. Place the crisper plate into the COSORI Air Fryer basket.  
  3. Select the Preheat function, adjust temperature to 400°F, then tap Start/Pause.  
  4. Place the potatoes onto the preheated crisper plate.  

COOKING & ASSEMBLING THE POTATO BOMBS

  1. Select the Roast function, adjust temperature to 400°F and time to 50 minutes, then tap Start/Pause.  
  2. Flip the potatoes halfway through cooking.  
  3. Remove the potatoes when done and set aside. 
  4. Mix the seasonings in a small bowl. Reserve ½ tablespoon of the seasoning and set aside. 
  5. Combine the remaining seasoning with the unsalted butter and mix well. 
  6. Fold back the foil on the potatoes to expose the top half. Use a knife to cut a slit down the middle but do not cut all the way through to the bottom. 
  7. Place your palms on both ends of the potato and push inwards to open the potato up even more. 
  8. Use a fork to fluff the inside of the potatoes, then add a heaping tablespoon of the butter mixture and mix it into the potatoes. Season with about 1 teaspoon of the reserved seasoning.  
  9. Top with the shredded cheddar cheese and place back onto the crisper plate in the air fryer basket, making sure no pieces of foil get too close to the top heating element. 
  10. Select the Broil function, adjust temperature to 425°F and time to 5 minutes, then tap Start/Pause
  11. Remove the potatoes when done, garnish with sour cream, green onion, and bacon, then serve warm. 

Chef Notes: If the potatoes are still too hot to hold onto, use a kitchen towel to hold down the potatoes.
