As a seasoning for sauces, soups, and marinades, homemade dried basil delivers a fresher, more robust flavor than store-bought. It’s an easy way to make the most of a plentiful harvest or keep that taste of summer on hand all year long. 

How To Pick Basil

To harvest fresh basil for a continuous, bushy, and productive plant, cut or pinch the stem just above a pair of leaves (a node) rather than picking single leaves. Start harvesting once the plant is 6–8 inches tall to promote new side shoots, encouraging more bushy growth.

Ingredient Swaps

This method works the same for most fresh herbs, such as parsley, oregano, mint, or cilantro.

Instructions

  1. Place the basil evenly between food dehydrator trays, ensuring they don’t overlap. 
  2. Set temperature to 110°F and time to 20 hours, then tap Start/Stop
  3. Remove the basil when the leaves are dried and brittle. Allow the basil to cool to room temperature. 
  4. Blend or crush the dried basil leaves to your desired consistency. Store in airtight containers. 

Chef Notes: Basil is fully dehydrated when the leaves are completely crisp, brittle, and crumble easily into bits with zero flexibility or soft spots. They should sound crunchy and not bend or wrinkle when touched. Depending on the size of your basil leaves and if you live in a humid or dry environment, the total dehydrating time may increase or decrease.
