Light & Fresh Caprese Stuffed Mushrooms

Portobello mushrooms brushed with garlic infused olive oil, then filled with slices of cherry tomato and fresh mozzarella. In just 8 minutes in the air fryer, they get golden brown, tender, and the cheesy gets nice and melted. They get drizzled with balsamic glaze and a sprinkle of fresh basil for the perfect stuffed mushroom recipe that’s light, fresh, and brings out all the flavors of summertime. 

Ingredient Swaps

Tomatoes: You can swap the cherry tomatoes for grape tomatoes.

Mozzarella: You can swap the fresh mozzarella pearls with regular fresh mozzarella and thinly slice it. 

How to Pick Mushrooms

Appearance: Pick mushrooms that are firm with a fresh, smooth appearance. The surfaces of the mushroom should be dry, but not dried out, and appear plump.

Instructions

PREPPING MUSHROOM

  1. Place the crisper plate into the COSORI Air Fryer basket. 
  2. Select the Preheat function, then press Start/Pause. 
  3. Prep the mushrooms: Combine 2 tablespoons olive oil and the grated garlic in a small bowl, then brush on both sides of the mushrooms. Season mushrooms with salt and pepper. Place the mozzarella, tomatoes, remaining 1 tablespoon olive oil, and a sprinkle of salt and pepper in the same bowl and stir to combine. Fill the mushrooms with the mozzarella tomato mixture. 

COOKING THE MUSHROOM

  1. Place the mushrooms onto the preheated crisper plate. 
  2. Select the Air Fry function, adjust temperature to 400F and time to 7 minutes, then press Start/Pause. 
  3. Remove mushrooms when golden brown, then carefully transfer to a serving dish.  
  4. Sprinkle the tops with fresh basil and drizzle with balsamic glaze, then serve. 

You can make your own balsamic glaze by simply reducing balsamic vinegar in a small saucepan over medium heat until it has reduced by half and has thickened to a glaze consistency. These caprese stuffed mushrooms are best served hot or warm.
