Easy and Delicious Berry Crumble Bars

Need a sweet treat that’s not a hassle to bring for a potluck or picnic? Try these berry crumble bars! Easy to make and transport, these bars are the perfect blend of a buttery, crumbly crust and a sweet, tangy berry filling baked to perfection in the air fryer. This recipe offers a hassle-free way to enjoy a homemade, healthier dessert that’s bursting with fresh berry flavor. Your guests won’t ever guess they are gluten-free and vegan too!

Plant-Based Butter: Feel free to use regular dairy butter instead of plant-based butter.

Instructions

PREPPING THE BERRY CRUMBLE BAR

  1. Berry filling: Combine all the ingredients for the berry filling into a bowl and mix then set aside. 
  2. Crumble and crust: Mix the quick cooking oats, oat flour, brown sugar, ground cinnamon, baking powder, and kosher salt into a bowl. Stir until well combined. Add the vanilla to the melted butter then pour into the oat mixture. Fold until mixture comes together but is still crumbly. 
  3. Prepare the pan: Lightly coat a square pan with oil spray and place sheets of parchment paper on top of each other but in opposite directions. Take 2/3 of the mixture and add to the bottom of the pan. Press the mixture into the pan making sure every corner is covered. 
  4. Pour the berry mixture on top then scatter the remaining oat mixture on top. 
  5. Place the crisper plate into the air fryer basket.  

COOKING THE BERRY CRUMBLE BAR

  1. Select Preheat function and adjust time to 330°F.  
  2. Place the filled square pan onto the crisper plate. Select the Bake function, adjust temperature to 330°F and time to 30 minutes, then tap Start/Pause.  
  3. Remove when done and set aside to cool before refrigerating for 2 hours before slicing, then serve.
