How To Pick Beef

To pick beef for jerky, choose lean, affordable cuts from the hind leg, specifically eye of round, top round, bottom round, or flank steak, to ensure a long shelf life and proper chewy texture. Trim all exterior fat, as fat doesn’t dehydrate, spoils quickly, and creates unwanted gristle.

Instructions

  1. Thinly slice the steak against the grain into ⅛-inch thick strips.  
  2. Whisk together the remaining ingredients in a bowl until combined, then add the beef strips and toss to coat. Marinate for 30 minutes or up to 24 hours, covered, in the refrigerator.  
  3. Place the meat strips onto food dehydrator trays, ensuring they don’t overlap.  
  4. Select the Jerky function at 165°F for 4 hours, then tap Start/Pause. 
  5. Remove when done. The jerky should bend but not snap in half. 
  6. Cool to room temperature on the trays, then serve. 

Chef Notes: The total dehydrate time for jerky will depend on how thick/thin you slice the meat. Jerky is done in a dehydrator when it is leathery, firm, and bends to a 90-degree angle without snapping in half.
