Sweet, savory, and packed with umami, this teriyaki chicken jerky is a delicious twist on a classic snack, and it’s all made easily in the dehydrator. Tender strips of chicken are marinated in a rich teriyaki blend, then slowly dried to create a chewy, flavorful bite with just the right balance of sweetness and salt.  

Lighter than traditional beef jerky but just as satisfying, it’s perfect for on-the-go snacking, meal prep, or adding a protein boost to your day. Once you try it homemade, store-bought won’t compare.

How To Pick Chicken

To pick the best chicken breast for jerky, choose fresh, boneless, skinless breasts that are lean and low in fat, as fat can spoil quickly. 

Ingredient Swaps

You can reduce the amount of liquid smoke to 1-2 teaspoons for a less smoky taste.

Marinade

Instructions

  1. Trim the chicken of any outer fat or tissue. 
  2. Cut the chicken crosswise into ¼-inch thick slices. 
  3. Place the chicken slices and marinade ingredients into a resealable plastic bag and mix well.  
  4. Marinate in the refrigerator for up to 24 hours.  
  5. Drain and discard the marinade.  
  6. Place the marinated chicken evenly between food dehydrator trays, ensuring they don’t overlap.  
  7. Select the Jerky function at 165°F for 4 hours, then tap Start/Stop
  8. Remove when done. The jerky should bend but not snap in half. 
  9. Cool to room temperature on the trays, then serve. 

Chef Notes: The total dehydrate time for jerky will depend on how thick/thin you slice the meat. Jerky is done inadehydrator when it is leathery, firm,and bends toa90-degreeangle without snapping in half.
