Fennel and Goat Cheese Stuffed Chicken Breasts

Fennel and Goat Cheese Air Fryer Stuffed Chicken Breasts (CS358-AF)

These stuffed chicken breasts are completely gluten-free and keto-friendly! French-inspired flavors of fennel and tarragon balance tangy goat cheese and spicy red pepper flakes make this a tasty chicken dish full of flavor. The chicken breasts can be stuffed ahead of time for meal prep, and the air fryer cooks it up in half the time of a conventional oven, making it a quick staple for multiple meals.

Yield: 4 servings

Prep Time: 30 minutes

Cook Time: 25 minutes

Ingredients:

  • 1 tablespoon olive oil
  • 1 fennel bulb, thinly sliced (preferably by mandoline)
  • 2 shallots, thinly sliced
  • 3 garlic cloves, minced
  • 2 teaspoons red pepper flakes
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh tarragon, chopped
  • 1 lemon, zested and juiced
  • 8 ounces goat cheese (not the crumbles)
  • Salt and pepper, to taste
  • 4 boneless, skinless chicken breasts
  • Cooking spray or spray oil, as needed

Items Needed:

  • Probe thermometer

Directions:

  1. Warm the olive oil in a saute pan over medium heat. 
  2. Add the fennel and shallots, stirring often until they are softened, about 4 minutes. 
  3. Stir in the garlic and red pepper flakes and cook 1 minute longer. Turn off the heat, transfer the fennel mixture to a medium bowl, and let cool.
  4. Stir chives, tarragon, lemon juice and zest, and goat cheese into the fennel mixture.  Season to taste with salt and pepper.
  5. Select the Preheat function on the Cosori Air Fryer, adjust temperature to 360°F, then press Start/Pause.
  6. Make a small slit on the thick side of the chicken breasts, cutting into the breast but not all the way through to make a pocket.  
  7. Stuff each chicken breast carefully with the goat cheese mixture, then secure and seal the open edges of the chicken with a toothpick.  
  8. Season the outsides of the chicken breasts with salt and pepper.
  9. Place the chicken breasts into the preheated baskets, and spray the tops of the chicken breasts with the cooking spray or spray oil.
  10. Set temperature to 360°F and time to 25 minutes, select Shake to add a Shake Reminder, then press Start/Pause
  11. Flip the chicken halfway through cooking and spray again with cooking spray or oil. The Shake Reminder will let you know when.
  12. Test the internal temperature of the chicken with a probe thermometer. The chicken should measure 160–165°F at the thickest part.  
  13. Rest the chicken breasts for 5-8 minutes, then remove the toothpicks and serve.

 

Keto Air Fried Avocado Fries

Every bite of these crunchy avocado fries is full of bright and creamy taste. The almond flour and Parmesan cheese give the fries a perfectly crispy touch in the air fryer while adding a pop of flavor. Taking just 15 minutes to make from start to finish, this is an easy snack for any time of the day.

Yield: 2-4 servings

Prep Time: 10 minutes

Cook Time: 5 minutes

Ingredients:

  • 2 large avocados, firm but ripe
  • 1 cup almond flour
  • ½ cup Parmesan cheese, grated
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon kosher salt
  • 2 eggs
  • Spray oil or cooking spray, as needed
  • Lemon, for finishing

Directions:

  1. Select the Preheat function on the Cosori Air Fryer, adjust temperature to 400°F, then press Start/Pause.
  2. Cut the avocados into ¼-inch to ½-inch wide wedges.
  3. Mix the almond flour, Parmesan, cayenne, and salt together in a medium bowl.
  4. Whisk together the eggs in a separate dish.
  5. Coat each avocado slice in egg, then roll in the almond flour mixture. Set aside.
  6. Arrange the avocado slices in a single layer in the preheated baskets.
  7. Spray the avocado fries with nonstick cooking spray.
  8. Set the temperature to 400°F and time to 5 minutes, then press Start/Pause.
  9. Serve the avocado fries immediately with a squeeze of lemon juice on top.
Keto Cheesecake Bites

Keto Cheesecake Bites (Fat Bombs) (CS358-AF)

These miniature cheesecakes are full of fat for a quick energy boost. Sour cream and lemon juice gives the cream cheese that signature tangy cheesecake flavor, and the sweetener can be replaced with your choice of a sugar replacement for a personal touch. Whip them up ahead of time for a snack or dessert whenever you have a sweet craving.

Yields: 16 bites

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 16 ounces cream cheese, room temperature
  • ¼ cup sour cream
  • ½ cup powdered allulose monk fruit sweetener
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon juice
  • ¼ teaspoon kosher salt

Items Needed:

  • Stand mixer with paddle attachment
  • Cosori Egg Bites Mold accessory or silicone mini-muffin accessory

Directions:

  1. Place the cream cheese, sour cream, and powdered sweetener in the bowl of a stand mixer fitted with the paddle attachment.  
  2. Beat on medium-high speed until the mixture is smooth and creamy. Adjust the speed to low, then add the egg and beat to combine. 
  3. Add the vanilla, lemon juice, and salt, then beat for 30 seconds on low speed until fully combined.
  4. Select the Preheat function on the Cosori Air Fryer, adjust temperature to 350°F, then press Start/Pause.
  5. Fill the egg bites mold accessory or silicone mini-muffin accessory with the cheesecake batter. Store the remaining batter in the refrigerator until ready to use for more batches.
  6. Place the accessory into the preheated baskets.  
  7. Select the Bake function, set time to 10 minutes, then press Start/Pause.
  8. Let the cheesecake bites cool to room temperature in the silicone mold, then remove the bites and place on a plate or tray to chill in the refrigerator for at least one hour.  
  9. Continue baking off batches of cheesecake bites and serve when done. Store the cheesecake bites in an airtight container in the refrigerator for up to one week.
Keto Cheesy Scalloped Zucchini

Keto Cheesy Scalloped Zucchini  (CS100-AO)

This scalloped zucchini dish is perfectly comforting and works great for a quick dinner. The zucchini is a great replacement for when you’re craving potato gratin. Infused with cheesy, lemony, and spicy flavor, the gruyere and mozzarella gives it flavor and body. This recipe also works great for meal prepping by creating it ahead of time and cooking it when you’re ready. Pair it with your favorite protein for a keto meal or eat it by itself as a main dish.

Prep Time: 15 minutes

Cook Time: 25 minutes

Ingredients:

  • 4 medium zucchini, sliced into ¼-inch thick rounds
  • 1 lemon, zested and juiced
  • 1 tablespoon olive oil
  • 1½ teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup fresh mozzarella, grated
  • 1 cup gruyere, grated
  • 1 tablespoon unsalted butter, plus more as needed
  • 1 shallot, finely minced
  • 3 garlic cloves, finely minced
  • 1 cup heavy whipping cream
  • 1 tablespoon red pepper flakes
  • Cooking spray
  • ⅓ cup grated Parmigiano Reggiano
  • ¼ cup fresh basil leaves, torn, for garnish

Items needed:

  • Large gratin dish or 9 x 13 baking dish

Directions:

  1. Toss the sliced zucchini rounds together in a large bowl with the lemon zest and juice, olive oil, ½ teaspoon kosher salt, and ½ teaspoon ground black pepper. Set aside.  
  2. Mix the freshly grated mozzarella and gruyere cheeses together in a separate bowl and set aside.
  3. Heat a medium saucepan over medium-high heat. Add the butter. Once it melts, add the shallots and garlic and cook until softened and fragrant, about 1 minute.  
  4. Add the heavy cream, 1 teaspoon kosher salt, and ½ teaspoon ground black pepper.  Simmer, stirring often, until the cream has reduced and thickened slightly.  
  5. Stir in ⅓ cup of the shredded gruyere and mozzarella cheese and the 1 tablespoon of red pepper flakes, then turn off the heat.
  6. Select the Preheat function on the Cosori Smart Air Fryer Toaster Oven, adjust temperature to 375°F, and press Start/Pause. 
  7. Grease the bottom and sides of the gratin or baking dish with unsalted butter or cooking spray.  
  8. Layer half of the sliced zucchini in the dish in a circular pattern, overlapping the edges slightly.  
  9. Pour half of the cream mixture over the layer of zucchini, then top with ⅓ cup of the shredded gruyere and mozzarella cheese.
  10. Layer the remaining zucchini over the top in the same fashion, then top with the rest of the cream mixture, followed by the remaining shredded gruyere and mozzarella cheese, and top with grated Parmesan.  
  11. Cover the gratin or baking dish tightly with aluminum foil.
  12. Place the gratin or baking dish on the wire rack, then insert the rack at mid position in the preheated oven.
  13. Select the Bake function, adjust temperature to 375°F and time to 20 minutes, and press Start/Pause
  14. Remove the foil from the gratin or baking dish.  
  15. Select the Broil function, adjust temperature to 450°F and time to 5 minutes, and press Start/Pause
  16. Remove the gratin or baking dish from the oven and let cool slightly.  
  17. Serve the scalloped zucchini casserole warm, sprinkled with freshly torn basil.

 

Keto Seed Crackers

Keto Seed Crackers (CS100-AO)

This crunchy, nutty, and healthy cracker can be paired with dip or cheese or enjoyed on its own for a tasty snack. The mixture of seeds can be adjusted to what you have on hand or what you enjoy best for a personalized recipe. These crackers can be made in several batches to keep some on hand whenever you’re in the mood for a snack, too.

Yields: 6 servings

Prep Time: 10 minutes

Cook Time: 35 minutes

Ingredients:

  • ⅓ cup almond flour
  • ⅓ cup sesame seeds (black, white, or a mixture)
  • 2 tablespoon  poppy seeds
  • 2 tablespoon  hemp seed hearts
  • ⅓ cup pumpkin seeds (pepitas)
  • ⅓ cup flax seeds
  • 1 teaspoon  kosher salt
  • ¼ cup olive oil
  • 1 cup boiling water

Directions:

  1. Select the Preheat function on the Cosori Smart Air Fryer Toaster Oven, adjust temperature to 325°F, and press Start/Pause. 
  2. Line the food tray with parchment paper.
  3. Combine the almond flour, sesame seeds, poppy seeds, hemp seed hearts, pumpkin seeds, flax seeds, and kosher salt in a medium bowl. 
  4. Add the olive oil and boiling water and stir with a fork until fully combined. The resulting “dough” should be slightly jelly-like.
  5. Spread the seed mixture in an even layer on the parchment lined food tray.  
  6. Insert the food tray at mid position in the preheated oven.  
  7. Select the Bake function, adjust temperature to 325°F and time to 35 minutes, and press Start/Pause
  8. Remove the seed cracker from the toaster oven and let cool completely.  
  9. Break into smaller pieces and serve with your favorite keto-friendly dip, meat, or cheese.

 

Keto Cloud Bread

Keto Cloud Bread (CS100-AO)

This fluffy cloud bread is a keto dream. Using just 3 main ingredients, it’s easy to put together and great for curing any bread cravings. The mild flavor is kicked up a notch with garlic and herbs, and it’s perfect for using with sandwiches or even to enjoy on its own.

Yields: 8 pieces

Prep Time: 15 minutes

Cook Time: 44 minutes

Ingredients:

  • 4 large eggs, separated
  • ½ teaspoon cream of tartar
  • 2 ounces cream cheese, room temperature
  • 1 garlic clove, grated
  • 1½ teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Items Needed:

  • Stand mixer with whisk and paddle attachment

Directions:

  1. Place egg whites in the bowl of a stand mixer fitted with the whisk attachment. Beat on high speed until soft peaks form. 
  2. Add the cream of tartar, then continue to beat on high speed until stiff peaks form. Transfer the egg white mixture to a separate bowl.
  3. Place the egg yolks and cream cheese in the bowl of the stand mixer, this time fitted with the paddle attachment. Beat on high speed until very smooth and no lumps remain, scraping down the sides of the bowl with a rubber spatula as needed.  
  4. Add the grated garlic, salt, oregano, and thyme and mix until combined.  
  5. Fold the egg white mixture into the egg yolk mixture in three additions, being careful not to pop the bubbles in the egg white mixture.
  6. Select the Preheat function on the Cosori Smart Air Fryer Toaster Oven, adjust temperature to 300°F, and press Start/Pause. 
  7. Line the food tray with parchment paper.
  8. Spoon four ¼ cup mounds of the batter onto the food tray, leaving space between. Place remaining batter into the refrigerator for a second batch later.
  9. Insert the food tray at mid position in the preheated oven.  
  10. Select the Bake function, adjust temperature to 300°F and time to 22 minutes, and press Start/Pause
  11. Remove the cloud bread from the oven and let cool. Repeat steps 8–10 with the remaining batter.
  12. Serve the cloud bread within 24 hours for best results. It can be used for sandwiches, burgers, avocado toast, and more.
