Step 1
Trim any excess fat from the pork and slice into 4 equal portions. Discard any pieces of pure fat.

Combine the pork with the orange zest, garlic, onion, serrano pepper, oregano, cumin, bay leaves, salt, and black pepper.

Place the pork into the Cosori Smart Air Fryer basket, without the crisper plate.

Step 4
Pour the water and orange juice over the top of the pork, add the cinnamon stick, then insert the basket into the air fryer.

Step 5
Select the Roast function, adjust temperature to 375°F and time to 45 minutes, then press Start/Pause.

Flip the pork pieces halfway through cooking and stir the contents of the basket until evenly mixed.

Remove the pork when done and allow to rest for 10 minutes before shredding.

Serve immediately with tortillas, cilantro, onion, salsa roja, and salsa verde if desired as the main ingredient for a taco, burrito, rice bowl, or topping for a salad.

- 7 garlic cloves, crushed
- 1 large yellow onion, small diced
- 1 serrano pepper, deveined and deseeded, cut into ¼-inch (6-millimeter) strips
- 1½ teaspoons (8 grams) dried oregano leaves
- 1 teaspoon (5 grams) ground cumin
- 2 bay leaves
- 2 teaspoons (10 grams) kosher salt, plus more to taste
- 2 teaspoons (10 grams) ground black pepper
- 1½ cup (354 milliliters) water
- ½ cup (118 milliliters) fresh orange juice
- 1 cinnamon stick
- 12 small corn tortillas, warmed, for serving
- Cilantro, chopped, for garnish
- Onion, chopped, for garnish
- Salsa roja, for serving
- Salsa verde, for serving
