Spiced Pork Chops with Apple Chutney

These smokey pork chops are paired with a sweet apple chutney for a simple yet delicious dinner. The air fryer gives the pork chops a light crisp on the outside while keeping them juicy and tender on the inside. Taking only 10 minutes to cook, this is a recipe you’ll want to keep on hand.

APPLE CHUTNEY INGREDIENTS:

  • ½ tablespoon unsalted butter
  • 2 apples, peeled and cut into ½-inch cubes
  • 1 tablespoon dried cranberries
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon freshly grated ginger
  • ⅛ teaspoon ground dry mustard
  • A pinch of ground allspice
  • A pinch of salt
  • 2 thyme sprigs, leaves removed

PORK CHOP INGREDIENTS:

  • 2 bone-in pork chops, 1-inch thick 
  • 1 teaspoon salt
  • ⅛ teaspoon chipotle chile pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground coriander
  • ½ teaspoon black pepper

DIRECTIONS:

  1. Make the apple chutney by adding butter to a small saucepan over medium heat. Add the apple and saute for 4 minutes. Add the remaining chutney ingredients and bring mixture to a boil. Reduce heat to low and simmer with lid on for 8 minutes, or until the apples are tender. Keep chutney warm while you make the pork chops.
  2. Select the Preheat function on the Cosori Air Fryer and press Start/Pause.
  3. Season both sides of the pork chops with the salt, chipotle chile pepper, garlic powder, coriander, and pepper. Place pork chops into the preheated air fryer baskets.
  4. Set temperature to 400°F and time to 10 minutes, then press Start/Pause.
  5. Remove when the internal temperature of the pork reads 145°F. Let the pork rest for 5 minutes before serving.
  6. Serve with apple chutney.

Maple Roasted Squash with Pomegranate and Pistachios

Maple Roasted Squash with Pomegranate and Pistachios

Pairing squash with maple syrup, pomegranate, and pistachios, this healthy side dish will impress everyone with your culinary genius while still being quick and easy to whip up. The maple syrup creates a flavorful caramelization on the squash while the pomegranate and pistachios provide an explosion of color.

Cook Time: 15 minutes

INGREDIENTS:

  • 1 small delicata squash or butternut squash
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup
  • Salt & pepper to taste
  • 2 thyme sprigs, leaves removed
  • 2 tablespoons pomegranate seeds
  • 2 tablespoons pistachio seeds, toasted and chopped

DIRECTIONS:

  1. Select the Preheat function on the Cosori Air Fryer and press Start/Pause.
  2. Peel the squash if using butternut. Slice squash into ¼-inch rings. Drizzle with olive oil, maple syrup, salt, pepper, and thyme leaves, then toss to coat.
  3. Place squash into the preheated air fryer baskets.
  4. Select the Root Vegetables preset on the Cosori Air Fryer, adjust time to 15 minutes, and press Start/Pause.
  5. Remove squash when tender and golden. Place squash on a serving dish. Sprinkle with pomegranate seeds and pistachios.

Pumpkin Spice Latte Cookies

Pumpkin Spice Latte Cookies

These cookies are sweet, comforting, and perfectly on theme for Fall. Inspired by the flavors of pumpkin spice and topped with a light cream cheese frosting, kids and adults alike won’t be able to get enough of these soft and fluffy cookies.

Yields: 15 cookies

Prep Time: 40 minutes

Cook Time: 8 minutes

COOKIE INGREDIENTS:

  • 1 stick unsalted butter, room temperature
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup canned pumpkin puree
  • 1½ cups whole wheat flour
  • 1¼ teaspoon pumpkin pie spice, plus more for sprinkling
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt

CREAM CHEESE FROSTING INGREDIENTS:

  • 2 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, room temperature
  • 1 cup powdered sugar
  • A pinch of salt
  • ½ teaspoon vanilla extract
  • ½ tablespoon maple syrup

DIRECTIONS:

  1. Cream the butter and sugars together in a large bowl using an electric mixer for 3 minutes or until light and fluffy. Add the egg, vanilla extract, and pumpkin puree and beat until smooth. Add the flour, pumpkin pie spice, baking soda, baking powder, and salt, and fold with a spatula to combine. Refrigerate the dough for 30 minutes.
  2. Select the Preheat function on the Cosori Air Fryer, adjust temperature to 320℉, and press Start/Pause.
  3. Line the inner air fryer basket with parchment paper. Scoop the dough into 1½-tablespoon balls and place into the baskets, spaced apart so they don’t stick to each other. You will need to work in batches.
  4. Insert baskets into the preheated air fryer.
  5. Select the Bake preset on the Cosori Air Fryer, adjust temperature to 320℉ and time to 8 minutes, then press Start/Pause.
  6. Remove cookies and repeat with remaining batter. Allow the cookies to cool before frosting.
  7. Make the frosting by creaming together all the frosting ingredients for 3 minutes or until light and fluffy. Frost the top of the cookies and sprinkle with extra pumpkin pie spice.
