Grilled Chicken Paillard:

+

2 medium boneless, skinless chicken breasts

+

Olive oil spray

+

1½ teaspoons kosher salt

+

1 teaspoon freshly ground black pepper

Plastic wrap

+

Meat tenderizer


Salad:

+

3 cups baby arugula

+

½ small Persian cucumber, thinly sliced

+

¼ cup grape or cherry tomatoes, thinly sliced

+

1½ tablespoons olive oil

+

1 lemon, juiced

+

Flaky salt, to taste

+

Freshly ground black pepper, to taste

+

2 ounces shaved Parmesan cheese, for topping

+

2 tablespoons toasted pine nuts, for topping

Directions

STEP 1

Place each chicken breast between 2 pieces of plastic wrap, then pound to ¼-inch thickness using the flat side of a meat tenderizer.

STEP 2

Remove the chicken from the plastic wrap, spray both sides with olive oil spray, then season evenly with kosher salt and pepper.

STEP 3

Place the cooking pot into the base of the Cosori Smart Indoor Grill, followed by the grill grate.

STEP 4

Select the Air Grill function on medium heat, adjust time to 7 minutes, press Shake, then press Start/Pause to preheat.

STEP 5

Place the chicken onto the preheated grill grate, then close the lid.

STEP 6

Toss the arugula, cucumber, tomatoes, olive oil, and lemon juice together in a large bowl until well combined.

STEP 7

Season to taste with flaky salt and pepper. Set aside.

STEP 8

Flip the chicken over halfway through cooking. The Shake Reminder will tell you when.

STEP 9

Remove the chicken paillard when done and serve topped with the arugula salad, Parmesan cheese, and toasted pine nuts.
