Step 1
Add he ingredients for the whipped maple mascarpone into the bowl of the
stand mixer. -

Attach the whisk attachment and whisk on low until everything is incorporated, then increase to a high speed until medium peaks form.

Set the whipped mixture in the fridge and let chill while you work on the pancake batter.

Whisk together the pumpkin purée, ricotta, eggs, brown sugar, milk, and pumpkin pie spice until well combined.

Whisk the all-purpose flour, baking powder, salt, and baking soda into another bowl until well mixed.

Fold the dry ingredients into the wet ingredients and mix until no dry spots are visible.

Remove the crisper plate from the COSORI Smart Air Fryer basket.

Spray the basket with oil spray.

Pour in ¼ cup of batter directly into the basket and slightly spread out the batter.

Adjust temperature to 400°F and time to 8 minutes, then press Start/Pause.

Flip the pancakes halfway through cooking.

Remove the pancakes when done and set aside.

Repeat with the remaining batter.

Stack the pancakes, then serve topped with the whipped maple mascarpone, pepitas, and maple syrup.
