    stand mixer.

    Attach the whisk attachment and whisk on low until everything is incorporated, then increase to a high speed until medium peaks form.

    Set the whipped mixture in the fridge and let chill while you work on the pancake batter.

    Whisk together the pumpkin purée, ricotta, eggs, brown sugar, milk, and pumpkin pie spice until well combined.

    Whisk the all-purpose flour, baking powder, salt, and baking soda into another bowl until well mixed.

    Fold the dry ingredients into the wet ingredients and mix until no dry spots are visible.
