Step 1
Whisk together the egg replacement powder with water until well combined. Let sit for one minute to thicken.

Whisk together the egg mixture, coconut milk, ½ cup coconut oil, and coconut extract.

Add the cake mix to the wet mixture and fold until no dry spots are left.
Step 4
Place the crisper plate into the COSORI Air Fryer basket.
Step 5
Select the Preheat function, adjust temperature to 310°F, then tap Start/Pause.
Step 6
Grease each cake pan with 1 tablespoon of coconut oil, then place a parchment paper circle on the bottom of the pan.
Step 7
Divide the batter between both cake pans and using a spatula, push the batter towards the edge and smooth to even out. You will have to bake these two separately.

Place one cake pan onto the preheated crisper plate.

Select the Bake function, adjust temperature to 290°F and time to 31 minutes, then tap Start/Pause.
Step 10
Remove the cake when done, let stand for 20 minutes, then turn out the cake. Set on a cooling rack to cool to room temperature.

Whisk together the ingredients for the cake soak and set aside.

Remove the parchment from the bottom and cut off the domed tops of the cakes to flatten.

Beat the vegan butter, vegan cream cheese, pure vanilla extract, and coconut extract in a stand mixer fitted with the whisk attachment until fluffy to start the frosting.

Beat in one cup of powdered sugar at a time until the mixture resembles buttercream frosting.
Step 15
Assemble by placing one cake flat side down. Generously dab on the cake soak with a pastry brush on the cut side of the cake. Spread one cup of frosting on top from edge to edge and sprinkle sweetened coconut flakes in the middle. Dab the cut side of the second cake with the remaining cake soak and invert onto the frosted base. Frost the outside of the cake and pack coconut flakes onto the frosting.

Refrigerate for 20 to 25 minutes before slicing and serving.
