Step 1
Mix the whole grain mustard, spicy brown mustard, mayonnaise, maple syrup, pickle brine, and black pepper in a small bowl until well combined. -

Remove the seeds and core from the pickle spears. Finely dice the spears. -

Roll out the puff pastry to a 10 x 10-inch square. -
Step 4
Spread a thin layer of the mixture onto the puff pastry, leaving a 1-inch border on the top. Reserve the remaining mixture and set aside. -
Step 5
Scatter the diced pickles across the puff pastry. -
Step 6
Place a layer of pastrami and Swiss cheese on top of the mixture and diced pickles. -
Step 7
Roll up tightly, starting from the bottom until you reach the top. -

Pinch the seams shut. -
Step 9
Cut in half using a serrated knife, then cut the halves into thirds. At this point you will have 6 pieces. each piece in half and you should have a total of 10 rolls. -
Step 10
Place the rolls onto the baking sheet of the COSORI Air Fryer Toaster Oven. -
Step 11
Insert the wire rack at level 2 position in the oven. -
Step 12
Select the Bake function, adjust temperature to 380°F and time to 20 minutes, then tap Start/Pause to preheat. -
Step 13
Place the baking sheet onto the wire rack in the preheated oven, then close the door to begin cooking. -
Step 14
Remove when done, place the pinwheels on a cooling rack to cool, then serve with the remaining mustard sauce.
