Step 1
Whisk together the flour, cocoa powder, baking powder, and salt in a small bowl.

Place the chopped chocolate and butter in a microwaveable bowl and microwave in 30 second intervals until just melted.

Combine the egg, sugars, vanilla, and peppermint extract in a large bowl. Whisk together on medium-high speed for 3 minutes using a hand mixer, or until the mixture is pale and falls into ribbons.

Add in the melted chocolate-butter mixture and mix on low speed until just combined, then add the dry ingredients and mix on low speed until just combined.

Fold in the chocolate chips. The resulting dough should resemble a thick brownie batter consistency.

Select the Preheat function on the COSORI Air Fryer (if available on your model), adjust temperature to 320°F, then press Start/Pause.

Line the air fryer basket with parchment paper, then use a cookie scoop to portion the dough into 4 portions, evenly spaced apart on the parchment paper.

Select the Bake function, adjust temperature to 320°F and time to 8 minutes, then press Start/Pause.

Remove the cookies when done and sprinkle immediately with crushed candy cane while still hot.

Allow cookies to cool for 5 minutes, then transfer to a wire rack to cool completely.

Repeat the baking process with the remaining cookie dough, then serve.

- 4 ounces semisweet chocolate, chopped
- 2 tablespoons unsalted butter
- 1 egg, room temperature
- ¼ cup granulated sugar
- ¼ cup dark brown sugar, packed
- ½ teaspoon vanilla extract
- ½ teaspoon peppermint extract
- ¼ cup semisweet chocolate chips
- 2 candy canes, crushed
