Air Fryer Fried Chicken

Yield: 6 pieces

Prep Time: 3 hours

Cook Time: 22 minutes

Ingredients

  • 6 pieces chicken, bone-in, skin on (cut of your choice)

  • 3 tablespoons kosher salt, divided, plus more for sprinkling

  • 2 cups buttermilk

  • 2 ounces vodka

  • 1 tablespoon black pepper, divided

  • 2 bay leaves

  • 1 egg + 1 egg white

  • Several fresh thyme sprigs

  • 1 tablespoon hot sauce

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1 cup cornstarch

  • ½ tablespoon paprika

  • ½ teaspoon cayenne pepper

  • ½ tablespoon dried oregano

  • ½ tablespoon dried thyme leaves

  • ½ tablespoon garlic powder

  • ½ tablespoon onion powder

  • ½ teaspoon chili powder

  • Grapeseed or canola oil, for spraying

Items Needed

  • Rimmed baking sheet

  • Wire baking rack

  • Meat thermometer

Instructions

1. Set the chicken on a plate or rimmed baking sheet, skin-side up, and sprinkle with kosher salt. Let the chicken sit for 30 minutes in the refrigerator before starting the marinating process.

2. Combine the buttermilk, vodka, 2 tablespoons salt, ½ tablespoon black pepper, bay leaves, eggs, fresh thyme, and hot sauce in a large bowl. Submerge the chicken pieces in the mixture and marinate in the refrigerator for at least 2 hours or overnight.

3. Combine the flour, baking powder, cornstarch, paprika, cayenne, oregano, thyme, garlic powder, onion powder, chili powder, 1 tablespoon salt, and ½ tablespoon black pepper in a bowl. Whisk to combine.

4. Remove the chicken from the buttermilk marinade and shake to remove excess. Dredge the chicken in the flour mixture and set each piece on a rimmed baking sheet fitted with a wire rack.

5. Allow the battered chicken to rest for 30 minutes before air frying.

6. Select the Preheat function on the COSORI Air Fryer, adjust temperature to 380°F, then tap Start/Pause.

7. Place a single layer of chicken, skin-side down, in the baskets. You may need to work in batches.

8. Select the Air Fry function, adjust temperature to 380°F and time to 12 minutes, then tap Start/Pause. When the timer goes off, spray any parts that still look floury with grapeseed or canola oil.

9. Flip the chicken over and cook for an additional 10 minutes at 380°F. Test the thickest part of the chicken with a thermometer, being careful not to touch the bone with the tip of the thermometer. The internal temperature should be between 160°–165°F.

10. Allow the chicken to rest for 5 minutes before serving.

  • ½ white onion, roughly chopped

  • 3 garlic cloves, peeled and roughly chopped

  • 2 chipotle peppers in adobo sauce

  • ½ cup ketchup

  • 8 ounces canned tomato sauce

  • 3 tablespoons honey

  • 4 teaspoons apple cider vinegar

  • ½ teaspoon black pepper

  • 2 bone-in pork chops (about 1 pound), ½–¾ inches thick

Items Needed

  • Medium saucepan

  • Blender, food processor, or immersion blender

  • Brush

Instructions

1. Make the BBQ sauce: Heat a medium saucepan over medium-high heat. Add the oil, then add the onion and garlic. Sauté for 5 minutes, or until the onion and garlic have softened. Add the remaining ingredients and stir to combine. Simmer the sauce on low heat for 20 minutes, stirring occasionally to prevent the bottom from burning. Transfer the sauce to a blender or food processor, or use an immersion blender and blend until smooth. Taste and adjust the seasoning if needed.

2. Place the crisper plate into the COSORI Air Fryer basket.

3. Select the Preheat function, adjust temperature to 450°F, then tap Start/Pause.

4. Prep the pork chops: Combine the salt, pepper, garlic powder, smoked paprika, and chili powder in a small bowl. Brush the olive oil on both sides of the pork chops, then season both sides with the spice mixture.

5. Place the pork chops onto the preheated crisper plate.

6. Select the Broil function, adjust time to 8 minutes, then tap Start/Pause.

7. Remove the basket after 4 minutes of cooking, then brush the BBQ sauce over the tops of the pork chops. Return the basket to the air fryer.

8. Flip the pork chops over when 2 minutes are left on the timer and brush with more BBQ sauce.

9. Remove the pork chops when done and allow to rest for 5 minutes, then serve with more BBQ sauce if desired.
