Bacon-Wrapped Asparagus (CS100-AO) 

There are few dads out there who don’t love bacon—and with this recipe for Bacon-Wrapped Asparagus, you can give him his bacon without sacrificing the greens. The bacon introduces a smoky flavor that gets paired with refreshing lemon zest for a delicious combination. You can pair this side with a steak, some roasted chicken, or salmon fillets for a protein-packed lunch or dinner. Try sprinkling some Parmesan cheese over the asparagus bundles before cooking for a cheesy crust to bring out even more texture and flavor!

Prep Time: 15 minutes 

Cook Time: 12 minutes 

Ingredients:

  • 1 pound pencil asparagus  
  • 12 slices bacon 
  • Kosher salt, to taste 
  • Ground black pepper, to taste 
  • 1 lemon, zested 

 

Directions: 

  1. Prepare the asparagus by cutting off the woody stems, then rinse them and set aside. 
  2. Slice the bacon strips in half, lengthwise, and set aside.  
  3. Lay 2 halves of bacon horizontally, 1 slice above the other and slightly over lapping, onto a cutting board. 
  4. Place 6 spears of asparagus onto the edge of the bacon.  
  5. Roll the asparagus and bacon together from left to right until the bacon halves are tightly wound around the asparagus spears. Repeat this process until all the asparagus spears are wrapped. 
  6. Season to taste with kosher salt and pepper. 
  7. Select the Preheat function on the Cosori Smart Air Fryer Toaster Oven, adjust temperature to 375°F, then press Start/Pause 
  8. Line the food tray with parchment paper and lightly coat the paper with cooking spray. 
  9. Place the bacon-wrapped asparagus onto the baking sheet. 
  10.  Insert the food tray at mid position in the preheated oven. 
  11. Select the Broil function, adjust temperature to 375°F and time to 12 minutes, then press Start/Pause. 
  12. Remove the bacon-wrapped asparagus from the oven when done and sprinkle with lemon zest.  
  13. Serve immediately.

Shrimp Kebabs (CS100-AO) 

These easy-to-make kebabs alternate pineapple, bell pepper, onion, and shrimp with an island-barbecue inspired glaze for a simple meal bursting with flavor. The whole family will have fun making these for Dad! You can use this combination to make shrimp tacos, burritos, rice bowls, and more for a versatile recipe you can use again and again.

Prep Time: 15 minutes 

Cook Time: 12 minutes 

Ingredients: 

  • 1 tablespoon tamari sauce  
  • 3 tablespoons ponzu sauce 
  • 1 large green bell pepper, medium diced  
  • ½ large red onion, medium diced  
  • 1 small pineapple, small diced 
  • ½ teaspoon kosher salt, divided 
  • ½ teaspoon ground black pepper, divided 
  • 1½ teaspoons vegetable oil, divided 
  • 1 pound 31/35 sized shrimp, peeled, deveined, heads removed 

 

Items Needed 

  • 15 Cosori metal skewers Note: If using wooden or bamboo skewers, soak overnight before cooking. 
  • Pastry brush 

 

Directions: 

  1. Mix the tamari and ponzu sauces together in a small bowl, then set aside. 
  2. Toss the bell pepper, onion, and pineapple with ¼ teaspoon kosher salt, ¼ teaspoon ground black pepper, and 1 teaspoon vegetable oil in a large bowl.  
  3. Toss the shrimp with ½ teaspoon of vegetable oil, ¼ teaspoon of kosher salt, and ¼ teaspoon ground black pepper in a separate medium bowl. 
  4. Assemble the skewers by alternating shrimp, pineapple, bell pepper, and onion onto each skewer. 
  5. Line the food tray with parchment paper. 
  6. Brush each side of the skewers with the tamari-ponzu mixture. 
  7. Select the Preheat function on the Cosori Smart Air Fryer Toaster Oven, adjust temperature to 375°F, then press Start/Pause.  
  8. Place the shrimp skewers onto the wire rack. 
  9. Insert the wire rack at top position in the oven.  
  10. Insert the food tray at low position to catch the drippings from the skewers while cooking. 
  11. Set temperature to 375°F and time to 12 minutes, press Shake, then press Start/Pause. 
  12. Flip the skewers halfway through cooking, and brush again with the tamari-ponzu mixture. The Shake Reminder will let you know when.  
  13. Remove the kebabs when done. 
  14. Serve immediately.

Lemon Squares (CS100-AO) 

These refreshing and sweet Lemon Squares are perfect for Dad after a hot day! Made with a filling and crust entirely from scratch, these lemon squares surprisingly only take 30 minutes to prepare. Serve these squares with a dollop of whipped cream or a scoop of vanilla ice cream for an indulgent dessert Dad will love you for. Adjust the lemon juice and sugar as needed for squares as sweet or as tart as he loves them.

Cook Time: 45 minutes 

Ingredients: 

Crust 

  • ¼ pound unsalted butter, room temperature 
  • ¼ cup granulated white sugar 
  • 1 cup all-purpose flour, plus more for cutting board 
  • ⅛ teaspoon kosher salt 
  • ½ tablespoon lemon zest 
  • Floured baking spray 

 

Filling 

  • 3 extra large eggs 
  • ¾ cup granulated white sugar 
  • ¾ cup lemon juice, fresh squeezed 
  • ⅓ cup all-purpose flour, sifted 
  • 2 tablespoons lemon zest 
  • Confectioner’s sugar, for dusting 

 

Items Needed  

  • 8 x 8 x 1.78-inch square baking pan 
  • Stand mixer with paddle attachment 

 

Directions: 

For the Crust: 

  1. Cream the butter and sugar together in a stand mixer with the paddle attachment on low speed. 
  2. Add the flour, salt, and lemon zest and mix on low speed just until incorporated. 
  3. Place the dough onto a lightly floured cutting board and gather into a ball.  
  4. Spray an 8 x 8 x 1.78-inch square baking pan evenly with floured baking spray. 
  5. Place the dough into the baking pan and flatten across the bottom with floured hands. 
  6. Refrigerate the crust in the pan for 15 minutes.  
  7. Select the Preheat function on the Cosori Smart Air Fryer Toaster Oven, adjust temperature to 350°F, then press Start/Pause.  
  8. Insert the baking pan with the wire rack underneath at mid position in the preheated oven. 
  9. Select the Bake function, adjust temperature to 350°F and time to 15 minutes, then press Start/Pause.  
  10. Remove when done. 

For Filling: 

  1. Beat the eggs in the stand mixer bowl. 
  2. Add in the sugar and mix on slow using the whisk attachment.  
  3. Add in the lemon juice and continue mixing. 
  4. Add the flour in three parts, whisking after each addition just until incorporated.  
  5. Fold in the lemon zest. 
  6. Pour the lemon filling into the cooled, pre-baked crust.  
  7. Select the Preheat function on the oven, adjust the temperature to 350°F, then press Start/Pause. 
  8. Insert the baking pan with the wire rack underneath at mid position in the preheated oven. 
  9. Select the Bake function, adjust temperature to 350°F and time to 30 minutes, then press Start/Pause 
  10. Bake until the filling is set, then remove the pan from the oven and let cool to room temperature. 
  11. Slice into 9 squares and dust with confectioner’s sugar.  
  12. Serve at room temperature.

Cajun Garlic-Butter Steak Bites (CS358-AF) 

Make a delicious steak meal for Dad right at home in just minutes with this Cajun Garlic-Butter Steak Bites recipe. You can use these bites for steak sandwiches, tacos, or even swap the steak altogether for Dad's favorite protein. Give it even more of a kick by adding cayenne pepper or chili flakes, or by adding extra garlic for an aromatic flavor.

Ingredients:

  • 1½ teaspoons of salt  
  • 1 teaspoon of black pepper 
  • 1 teaspoon garlic powder 
  • 1 teaspoon onion powder 
  • 1 teaspoon chili powder 
  • 1 teaspoon dried thyme  
  • 1 teaspoon dried oregano 
  • 1 tablespoon smoked paprika 
  • 3 tablespoons olive oil 
  • 1½ tablespoons dark brown sugar 
  • 2 pounds top sirloin steak, cut into 1- inch cubes  
  • 6 tablespoons unsalted butter, softened  
  • 5 cloves garlic, finely chopped 
  • ¼ cup parsley, chopped, for garnish  

 

Directions:

  1. Combine the salt, black pepper, garlic powder, onion powder, chili powder, thyme, oregano, smoked paprika, olive oil and dark brown sugar in a medium mixing bowl. 
  2. Mix the steak with the spice marinade and let it sit for 5 minutes at room temperature. 
  3. Select the Preheat function on the Cosori Smart Air Fryer, adjust temperature to 400°F, then press Start/Pause. 
  4. Combine the softened butter and chopped garlic in a small bowl. 
  5. Transfer the marinated steak into the preheated basket. 
  6. Cover the top of the steak evenly with the garlic butter mixture. 
  7. Select the Steak function, adjust time  to 12 minutes, press Shake, then press Start/Pause.  
  8. Stir the steak halfway through cooking to make sure it is evenly coated with the garlic butter. The Shake Reminder will let you know when. 
  9. Remove the steak from the oven when done. 
  10. Garnish with chopped parsley and serve warm.

Parmesan Ranch Roasted Brussels Sprouts (CS358-AF) 

After you make these Parmesan Ranch Roasted Brussels Sprouts, you may never want Brussels sprouts any other way again.   • 1 tablespoon ranch seasoning powder 
  • 1 teaspoon red chili flakes 
  • 1 teaspoon kosher salt  
  • ½ teaspoon black pepper 
  • ¼ cup olive oil  
  • 1 tablespoon lemon juice 
  • 1½ pounds Brussels sprouts, halved  
  • ¼ cup Parmesan cheese, grated 

 

Directions:  

  1. Combine the ranch seasoning, red chili flakes, kosher salt, black pepper, olive oil, and lemon juice in a medium mixing bowl. 
  2. Coat the Brussels sprouts with the spice marinade and set aside. 
  3. Select the Preheat function on the Cosori Smart Air Fryer, adjust temperature to 350°F, then press Start/Pause 
  4. Transfer the marinated Brussels sprouts to the preheated air fryer basket. 
  5. Select the Shake function, set temperature to 350°F and time to 12 minutes, then press Start/Pause 
  6. Mix the Brussels sprouts halfway through cooking and sprinkle the Parmesan cheese on top. The Shake Reminder will let you know when.  
  7. Remove the Brussels sprouts when done. 
  8. Serve immediately.

Cinnamon Raisin Pecan Cookies (CS358-AF) 

These soft and chewy cookies are great for any occasion. Swap the nuts and fruit for Dad’s favorites or even turn them into chocolate chip cookies! Try these cookies warm out of the air fryer with vanilla ice cream for a dessert everyone in the family will love. These cookies can be stored at room temperature for 3–4 days.

Prep Time: 1 hour, 15 minutes  

Cook Time: 10 minutes  

Ingredients:

  • ½ cup unsalted butter, melted  
  • 1 egg 
  • 1 teaspoon vanilla extract 
  • ½ cup light brown sugar  
  • ¼ cup granulated sugar 
  • 1½ cups all-purpose flour  
  • ½ teaspoon salt 
  • 1 teaspoon baking soda 
  • 1 teaspoon cinnamon  
  • ¼ cup pecans, chopped 
  • ¼ cup raisins  
  • Cooking spray  

 

Directions:  

  1. Combine the butter, egg, vanilla extract, brown sugar, and granulated sugar in a medium mixing bowl. Set aside. 
  2. Mix the flour, salt, baking soda, and cinnamon in a separate medium mixing bowl. 
  3. Combine the dry ingredients with the wet ingredients and fold in the pecans and raisins. 
  4. Cover the dough with plastic wrap and let chill in the fridge for 1 hour.  
  5. Select the Preheat function on the Cosori Smart Air Fryer, adjust temperature to 300°F, then press Start/Pause. 
  6. Roll the cookie dough into 1½-inch balls and set aside. 
  7. Place a piece of parchment paper in the preheated air fryer basket and spray with cooking spray. 
  8. Transfer the rolled cookie dough balls onto the parchment paper. 
  9. Select the Bake function, adjust temperature to 300°F and time to 10 minutes, then press Start/Pause. 
  10. Allow the cookies to cool in the basket for 5 minutes before removing. 
  11. Serve warm.
