5 Roma tomatoes, small diced

1 red onion, small diced

1 cup cilantro, chopped

1 jalapeno, minced

4 limes, divided and juiced
+
Kosher salt, to taste

Ground black pepper, to taste

4 avocados, pits removed

5 flour tortillas (burrito size, 10-inch)
+
Oil spray
+
8 ounces shredded cheddar cheese, plus more for garnish
+
1 can refried pinto beans (16 ounces), warmed
+
1 can refried black beans (16 ounces), warmed
+
2 cups shredded rotisserie chicken, warmed
+
2 cups salsa con queso, warmed
+
2 cups sour cream
+
1 bunch scallions, finely chopped, for garnish
+
Chips, for serving

Directions
STEP 1
Toss the diced tomatoes, red onion, cilantro, jalapeno and juice of 2 limes together in a medium bowl to make the pico de gallo.
STEP 2
Season to taste with salt and black pepper. Reserve ¼ cup and set aside.
STEP 3
Mash the avocados in a medium bowl. Add the reserved ¼ cup of pico de gallo and the juice of the remaining 2 limes.
STEP 4
Season the guacamole to taste with salt and black pepper. Set aside.
STEP 5
Select the Preheat function on the Cosori Air Fryer and press Start/Pause.
STEP 6
Spray both sides of each tortilla with oil spray.
STEP 7
Cut a line through 4 tortillas, starting from the middle all the way to the right side.
STEP 8
Fold the cut tortillas into loosely shaped cones and place each one seam-side down into each corner of the preheated inner air fryer basket. The cones will unravel slightly, creating a bowl formation.
STEP 9
Sprinkle ¼ cup of cheddar cheese across the bottom of the tortilla bowl.
STEP 10
Place the 5th tortilla over the cheddar cheese.
STEP 11
Trim the tortillas sticking out of the corners of the air fryer basket, lining them up with the edges of the basket.
STEP 12
Lay an aluminum foil sheet down into the air fryer basket on top of the tortilla bowl, then place several balls of foil on top to help it retain its shape while cooking.
STEP 13
Place another sheet of foil on top of the foil balls and against the tortilla walls, creating a tent to prevent the air fryer balls from floating up while cooking.
STEP 14
Insert the basket into the preheated air fryer.
STEP 15
Set temperature to 400°F and time to 5 minutes, then press Start/Pause.
STEP 16
Remove the air fryer basket and place onto a heatproof surface when done cooking.
STEP 17
Detach the inner air fryer basket and carefully remove the foil tent and foil balls. Let cool completely.
STEP 18
Transfer the tortilla bowl to a serving plate.
STEP 19
Layer the refried pinto beans, refried black beans, pico de gallo, guacamole, shredded chicken, salsa con queso, and sour cream in order into the tortilla bowl.
STEP 20
Garnish with cheddar cheese and scallions.
STEP 21
Serve immediately with chips.
