Pumpkin Spice Loaf with Maple Cream Cheese Glaze

Ingredients

Pumpkin Spice Loaf:

+

¾ cup pumpkin puree 

+

2 large eggs, room temperature 

+

½ cup light olive oil  

+

½ cup buttermilk 

+

1 teaspoon vanilla extract 

+

½ cup white sugar 

+

½ cup brown sugar, packed 

+

1¾ cups all-purpose flour 

+

1 teaspoon baking soda 

+

½ teaspoon salt 

+

½ teaspoon cinnamon 

+

½ teaspoon pumpkin pie spice 

+

¼ teaspoon ginger 

+

¼ teaspoon nutmeg 

+

Oil spray 

Maple Cream Cheese Glaze:

+

1 package cream cheese (8-ounces), room temperature 

+

½ stick unsalted butter, room temperature 

+

¾ cup powdered sugar 

+

¼ cup pure maple syrup 

+

1 teaspoon vanilla extract 

+

Pinch of salt 

+

Chopped pecans or pumpkin seeds, for topping

2 mini loaf pans

Toothpicks

Stand mixer with paddle attachment

Directions

STEP 1

Whisk together the pumpkin puree, eggs, oil, buttermilk, vanilla extract, and both sugars until smooth. 

STEP 2

Add the flour, baking soda, salt, cinnamon, pumpkin pie spice, ginger, and nutmeg. Stir with a spatula until combined.  

STEP 3

Select the Preheat function on the Cosori Air Fryer, adjust temperature to 300°F, and press Start/Pause

STEP 4

Grease 2 mini loaf pans with oil spray. Pour the batter into the loaf pans, filling each ⅔ full. Make any leftover batter into muffins, if desired. 

STEP 5

Insert the loaf pans into the air fryer baskets. 

STEP 6

Set temperature to 300°F and time to 32 minutes, then press Start/Pause

STEP 7

Remove loaves when a toothpick inserted into the center of each comes out clean.  

STEP 8

Allow loaves to cool to room temperature before glazing. 

STEP 9

Beat the cream cheese and butter in a stand mixer until smooth. Add the powdered sugar, maple syrup, vanilla extract, and a pinch of salt. Beat until smooth. 

STEP 10

Glaze the mini pumpkin spice loaves with the maple cream cheese glaze and top with chopped pecans or pumpkin seeds.
