“Pretzel” Bites & Irish Pub Beer Cheese

Pretzel Bites:

1 can prepared biscuits
+
8 cups water
+
⅓ cup baking soda
+
¼ cup butter, melted
+
2 tablespoons flaky salt or pretzel salt

Beer Cheese:
+
6 ounces cream cheese
+
1 cup sharp cheddar cheese, freshly shredded
+
1 cup Irish cheddar cheese, freshly shredded
+
1 cup Fontina cheese, freshly shredded
+
⅔ cup stout beer
+
3 garlic cloves, minced
+
1 tablespoon spicy brown mustard
+
1½ teaspoons Worcestershire sauce
+
1 teaspoon paprika
+
1 teaspoon kosher salt
+
1 tablespoon fresh chives, chopped, for garnish

Directions
STEP 1
Cut the individual biscuits into quarters and roll into balls. Set aside.
STEP 2
Bring the water to a boil in a large saucepan and add the baking soda. Boil the biscuit dough balls for 15 to 20 seconds at a time, then transfer to a tray using a slotted spoon.
STEP 3
Place the crisper plate into the Cosori Smart Air Fryer basket, then place the boiled dough balls onto the crisper plate in a single layer.
STEP 4
Brush the dough balls with melted butter and sprinkle with flaky salt or pretzel salt.
STEP 5
Select the Air Fry function, adjust time to 10 minutes, then press Start/Pause. Open the basket to brush the pretzel bites with butter every 3 to 4 minutes.
STEP 6
Remove the pretzel bites when done.
STEP 7
Place the cream cheese and all three shredded cheeses into the bowl of a food processor fitted with the blade attachment. Blend until fully combined.
STEP 8
Add the beer, garlic, mustard, Worcestershire sauce, paprika, and salt into the food processor and blend until smooth.
STEP 9
Transfer the cheese into a small heatproof baking dish.
STEP 10
Place the baking dish onto the crisper plate.
STEP 11
Select the Broil function, adjust time to 5 minutes, then press Start/Pause.
STEP 12
Remove the beer cheese when done, garnish with chives, and serve with the pretzel bites.
