Herb Aioli:

+

½ cup light mayo

+

1 teaspoon light sour cream

+

1 tablespoon fresh parsley, chopped

+

1 tablespoon fresh basil, chiffonade

+

1 tablespoon fresh chives, chopped

+

1 tablespoon fresh dill, chopped

+

1 tablespoon lemon juice

+

¼ teaspoon lemon zest

+

2 teaspoons extra virgin olive oil

+

Kosher salt and pepper, to taste


Potatoes:

+

1½ pounds small creamer potatoes

+

3 tablespoons avocado oil

+

¼ teaspoon cayenne pepper

+

½ teaspoon garlic powder

+

1 tablespoon black pepper

+

2 teaspoons kosher salt, plus more for boiling water

+

¼ teaspoon smoked paprika (optional)

+

Oil spray

Directions

STEP 1

Mix all the ingredients for the herb aioli in a small bowl and set aside to chill in the refrigerator.

STEP 2

Place the potatoes in a medium pot filled with cold salted water.

STEP 3

Boil the potatoes until a knife easily pierces through without any resistance.

STEP 4

Strain the potatoes and let cool for easy handling.

STEP 5

Combine the potatoes, avocado oil, cayenne pepper, garlic powder, black pepper, salt, and smoked paprika in a small bowl. Toss to coat.

STEP 6

Smash the potatoes gently with the palm of your hands, crushing them only halfway so that they stay intact.

STEP 7

Coat the Cosori Smart Air Fryer basket lightly with oil spray.

STEP 8

Place the potatoes directly into the air fryer basket, without the crisper plate.

STEP 9

Select the Air Fry function, adjust temperature to 400°F and time to 15 minutes, then press Start/Pause.

STEP 10

Remove the potatoes when done.

STEP 11

Serve hot with a side of aioli.
